Beef and Vegetable Soup

Makes 8 Servings


1 1/2 Lb Chuck Roast

5 Carrots, Sliced

1 Lb Fingerling Potatoes, Halved

12 Oz Fresh Green Beans, Cut & Cleaned

10 Oz Fresh Peas (or frozen)

10 Cups Beef Broth

2 Tbsp Awesome Onion Soup

1 Small Yellow Onion, Diced

2 Tbsp Canola Oil


Preparation:


Let us begin by trimming and cutting the chuck roast into bite size pieces.  Remove the large sections of fat.  A little enhances the flavor.




Preheat the Instant Pot to “Saute”, 1 tbsp oil and sear the meat.  Do not cook it all the way, we just want to brown it.  Remove and set aside.






Add the chopped onion and brown.  



Add the beef back into pot.  Next add the beef broth, I really like this one!





Next add the Awesome Onion Soup.




Cut the potatoes and carrots into bit size spices and add.  Seal the Instant Pot and cook ob Hi Pressure for 30 minutes.





Let pressure release naturally.  Remove lid and add the fresh pea and green beans.


White the soup was cooking, I carambalized some onions and made made a grilled cheese (swiss cheese and sour dough bread) with the onions in the middle.  A perfect accompaniment to this soup.  Soo good!





Set pot to “Saute” and simmer for about 10 minutes till peas and beans are done.



Ladle into a bowls and enjoy!
