1 head of cauliflower
2 tablespoons Milford Spice Company Creole Seasoning
1 block cream cheese
1 cup mayo
1 tablespoon olive oil
2 cups cheese (we use a combo of about 1.5 cups Italian blend and a half cup parmesan, but use your favorites!)
Break or chop cauliflower into florets and toss lightly with olive oil. Roast on cookie sheet in 400 degree oven until soft and lightly browned. Approximately 25 - 30 minutes.
Combine remaining ingredients in Crock Pot, then add cauliflower when it is ready and stir occasionally. It should be ready in fifteen minutes.
Serve with sliced baguette or crackers.
