Cauliflower Creole Dip

1 head of cauliflower 
1 block cream cheese 
1 cup mayo 
1 tablespoon olive oil 
2 cups cheese (we use a combo of about 1.5 cups Italian blend and a half cup parmesan, but use your favorites!)

Break or chop cauliflower into florets and toss lightly with olive oil.  Roast on cookie sheet in 400 degree oven until soft and lightly browned.  Approximately 25 - 30 minutes.

Combine remaining ingredients in Crock Pot, then add cauliflower when it is ready and stir occasionally.  It should be ready in fifteen minutes.

Serve with sliced baguette or crackers.

Had this at the Holiday Open House and it is spectacular! Can not wait to make at home. May try adding some canned chicken or shrimp and serving over noodles.

I had it at a cooking class at Milford Spice and I loved it so much, I had to buy the spices and make it again. My family adored it. My only addition...bacon! It was super delicious!
