Cauliflower Mushroom Risotto

Makes 4-6 Servings


1 Head White Cauliflower, Sectioned

2 Tbsp Olive Oil

1 Tbsp Johnny Pizza

1 Cup Freshly Grated Parmesan Cheese

1/2 Cup Broth (of your choice, I used beef)

8 Oz Sliced Mushrooms

1/2 Onion, Diced

1/2 Bunch Italian Parsley


Preparation:


Start by rinsing your sectioned cauliflower under cold water, and drain.



Next shred the cauliflower using your favorite shredded on the large grate.  Discard or cut any larger pieces.  Try to get as uniform as possible.



Dice the onion and slice the mushrooms.  Also shred the parmesan cheese, you can add as much or as little as you like.





Heat a large skillet with the olive oil and sauté the onion until translucent.  



Add the mushrooms and Johnny Pizza.  Sauté till the mushrooms shrink and get a little color.  



Now add in your shredded cauliflower.  Sauté for about 5-7 minutes stirring often.  




Add in the broth and continue to stir for another 5 minutes.  



Now add in the parmesan cheese and parley.  Stir till cheese is melted.




This is soo fabulous served as is or with a steak.  You will not miss the rice!
