In large bowl put:
1 lb box Orzo, cooked as directed, drained, cooled 1-11 oz jar Kalamata pitted olives, drained, halved 1 package cherry tomatoes, halved
1⁄2 yellow or orange pepper, finely chopped
1⁄4 cup red onion, minced
6 oz package Feta crumbles
1⁄2 English cucumber, finely chopped
Mix together 1⁄2 to 3⁄4 bottle of Greek salad dressing, (I use Niki’s Greektown Dressing) with 1 Tbsp “It’s All Greek To Me”, add and stir into the bowl, mixing gently to blend.
**I don’t actually add cucumbers since I don’t like it them, but others do. Traditionally they are found on a Greek salad. This is a pasta version of my favorite salad. You could add chopped beets as well but it makes the salad very pink.
