Israeli Chopped Salad

1 English Cucumber

3 Medium Tomatoes

1 Small Red Onion

1 Bunch Flat Leaf Parsley

1/4 Cup Olive Oil

1 Lemon, Juiced

1 Tbsp Zahtar

1/4 Sliced Almonds


Preparation:


To begin let us chop our veggies into similar sized pieces, we want to try to make it all uniform size.  Cutting the cucumber as shown is an easy way to do this.




Place in bowl and add the Zahtar, feta cheese and almonds.  Then mix together the lemon juice and olive oil and add to bowl.  Mix well and set in fridge till ready to use.  If eating right away, let sit for 30 minutes in fridge to meld all the flavors.





We served this with the Sumac Sheet Pan Chicken.  Soo wonderful.  We hope you enjoy.
