Mexican Corn Salad

Ingredients:

2 Ears of corn, roasted
1/4 cup mayonnaise
1/2 cup chopped fresh cilantro
1 chopped avocado
1 diced red pepper
1/2 cup queso cotija
Juice from half a lime
Milford Spice Co Chili Lime to taste (we start with a level teaspoon and serve extra alongside for those desiring more)

Optional:

Red onion
Diced jicama
Black beans
Diced chicken

Combine all imgredients except avocado and toss gently.  Add avocado at the end or serve on top.
