Greek Lemon Garlic Chicken with Potatoes

Mediterranean foods are so fantastic, and good for you!  What is there not to love about this simple one sheet pan dinner.  Chicken thighs, lemon, garlic, olive oil and It’s All Greek to Me.  So simple but soon flavorful!  This is a dish sure to please the entire family.


It’s All Greek to Me is hand blended from Greek oregano, onion powder, garlic powder, sea salt, black pepper, parsley, Korintje cinnamon and ground nutmeg.  This blend creates a wonderful gyros sauce or use it for marinating your Mediterranean style chicken gyros or beef, lamb, chicken or pork shisk-ka-bobs. Similar to our Mediterranean Dry Rub this blend is outstanding on grilled or baked chicken and fish.


We enjoyed an ice-cold glass of Biblia Chora Ovilos White with this meal.

Chimichurri Sauce

We have had a streak of ridiculously hot weather lately.  A Chimichurri Sauce is an Argentinian herb sauce that can be served with steak, fish, chicken or pork.  It is also fabulous served over roasted or grilled veggies for our Keto/Vegan friends.


I used Red Pepper flakes to add a little heat to this sauce.  Depending on what herbs you have growing in your garden, you can add a little thyme, oregano, basil or rosemary.  You can season this fabulously easy sauce with Adobo Lime, Perfect Chili, Mexican Blast, and if you switch out cilantro with basil use An Evening in Tuscany!


I served this with an Adobo Lime seasoned skirt steak with Perfect Chili Oven Roasted Potatoes.  Click links to see these recipes.

Everything Better Smoked Salmon Flatbread

It has been ridiculously hot in my neck of the woods, almost 100 for weeks!  As someone who loves to cook I was trying to be creative for a fun and delicious cool meal, yet not too filling!  My family loves lox and bagels, so this is a play on that breakfast favorite.


This would be fantastic on a brunch table as it is amazing at room temperature, or as a light lunch or dinner.


I bought a new blend called Everything Better.  Wow, soo good!  This is made by hand blending delicious California grown and roasted garlic, onion, poppy seed, both white and black sesame seeds and kosher salt.  Really tastes just like a bagel.  This blend is great sprinkled on chicken, avocado toast, eggs, veggies and salads.


A chilled Mimosa would be a perfect match for this dish.

Bean Salad with Honey Chipotle Vinaigrette

My girls asked me to come up with something filling and healthy that they could have for lunch and snack on after school.  A bean salad is the perfect quick and easy meal.  Protein, lots of veggies with a tangy delicious vinaigrette.  Lasts in fridge for almost a week, just stir before serving.


I did a three bean combo and truly you can use any combination of beans that appeals to you.  Same with the veggie combo that you choose.  I did a Southwestern spin on this using Honey Chipotle in the vinaigrette.  Honey Chipotle is one of my families favorite blends.  It is hand blended using granulated honey, sea salt, chipotle powder, granulated onion, Spanish paprika and Italian seasoning.  The combination of smokey sweet heat is amazing on salmon, shrimp, chicken, veggies and more.


Now of course you can make your own version of bean salad using beans and veggies of your choice and any spice blend that sounds good to you.  See this handy chart to make your own vinaigrette.

Adobo Lime Roasted Tomatillo Salsa

This is one of my favorite salsas.  So fresh tasting with the lovely slightly roasted/charred flavor of the veggies.  I used Adobo Lime in this recipe because is adds such depth to the salsa.  This is hand blended with fennel seed, cumin, coriander, black pepper, garlic, Mexican oregano, lime zest, kosher salt, thyme and rosemary.  It is one of Milford Spice Company’s all time best sellers.  One of my families favorite!


You can vary the peppers you use depending on how spicy you like it.  More serranos and jalapeños=more spicy.


You can use this salsa for anything.  As a topper for tacos, burritos, enchiladas, or just chips.  It is fabulous on Huevos Rancheros too!

Empanadas

I had some pie dough that I bought on sale and decided to make Empanadas.  Quick and easy, great for the kids to help.  The pie dough makes these really flaky and delicious.


I used Mexican Blast to make this dish.  This is such a versatile spice blend, great in just about anything Southwestern.  Mexican Blast is hand blended with Mexican oregano, black pepper, ancho powder, pasilla powder, chipotle powder, cumin, granulated garlic, garlic flakes, granulated onion, onion flakes and coriander.


You can serve these with Mexican Rice and a Black Bean & Corn Salad.


An ice cold Corona light pairs very well with this meal.

Chicken & Mushroom Casserole

This is super easy dinner that will bring everyone to the table for some family time.  Very little prep and very little to clean up.  Great for the kiddos to help.  Play a game before dinner while this fabulous casserole wets the appetite for the whole family.


Cream of Mushroom soup is very versatile and is a great item to keep in the pantry for a quick sauce.  I used Buon Appetito which is a balanced mix of Greek oregano, basil, marjoram, thyme, rosemary and sage.  It really enhances the flavors of tomato sauces, fish, poultry, meat, and salad dressings.  Truly a great addition to almost anything.

Sheet Pan Pork Chops & Veggies

I absolutely love making Sheet Pan dinners!  It is so quick and easy not to mention healthy!


Today I made Pork Chops & Roasted Vegetable with Ravensview Rosemary Garlic.  This is such a versatile spice blend, fantastic on veggies, chicken, pork and lamb.  It is hand blended with black pepper,  sea salt, garlic, onion, chives and rosemary.


You can pretty much use any hardy veggies you have on hand.  I used cauliflower, carrots, red onion and mushrooms.  Some other great veggies are potatoes, sweet potatoes, broccoli, squash, bell pepper, poblano or jalapeño peppers to name a few.


You can cook on one or two sheet pans.  I wanted a ton of veggies so I  used two. 


A cold glass of Fat Tire Ale is a perfect match with the meal.

Chicken Soup with Bisquick Dumplings

This is another quick and easy recipe to help bring families back around the dinner table.  This soup is super simple, and another recipe that the kiddos can help cook.


You can pretty much use whatever veggies you have on hand.  For this I used carrots, potatoes, onion and celery.  You could also use sweet potatoes, broccoli, zucchini, squash, rutabaga, to name a few.


Today I used Adobo Lime to season the soup.  This fabulous seasoning is hand blended from fennel seed, cumin, coriander, black pepper, garlic, Mexican oregano, lime zest, kosher salt, thyme and rosemary.  It is truly wonderful on just about everything from fish, shrimp, chicken, pork, beef and vegetables.  One of Milford Spice Company's  best sellers at Farmer’s Markets and a customer favorite!


You can use a boxed stock/broth or you can simmer you chicken in water to cook and use that as y our stock.


Bisquick is used to create these fantastic dumplings.  This soup is perfect for a chilly night….

Bisquick Apple Dessert

I was recently challenged to come up with some simple recipes to help bring families back around the dinner table.  As we will be sharing these ideas with a local food pantry, we want to keep the ingredients simple and those that you would most likely find in your own pantry, or those that are easy to obtain on a modest budget.  


Something that the Food Pantry has in abundance right now is fresh apples and Bisquick baking mix.  This is a delicious, quick and simple dessert that the kiddos would have a blast to help make.


I used New Hudson Apple Pie Spice mix for this recipe.  This is hand blended with Korintje cinnamon, allspice, nutmeg, ginger root and cardamom.  Sooo yummy!  Great in your coffee too!

Citrus Sea Salted Trout

My wonderful hubby went fishing with his brother and they brought back some fantastic fresh trout!  There is something so primitive and satisfying about eating what you have grown or caught.  I love living here, so beautiful!




Citrus Sea Salt is made for fish!  This is hand blended from sea salt, orange zest, lemon zest, coarse black pepper, lime zest, smoked Pacific sea salt and ginger root.  It is fabulous on anything from fish, veggies, chicken and pork.  So versatile and truly special.


This recipe could not be any simpler and can be adapted to use any fish.  Serve with an herbed rice and fresh veggies.


We enjoyed an ice-cold glass of Chardonnay with this meal.

Heirloom Tomato Tart

I love going to the Farmer’s Market! It is so much fun to walk around to see what is new and what I must try.  Today I decided that tomatos are my must have.  Todd from Todd’s Heirloom Tomatoes is a tomato aficionado!  He and his wife Tonya are really delightful and full of knowledge.  Their tomatoes (and other produce) are the top of the line quality and just amazing flavor.  You can find them at a variety of our local markets.  I visited them at the Parker Sunday Market on Main Street.






I am making a Tomato Ricotta Tart.  This a simple but oh so tasty dish.  Because there are so few ingredients, the quality of these ingredients are imperative.  Please get the best you can possibly find and you will not be sorry!  Use a full fat Ricotta, imported from Italy if you can find.  My beautiful friend Stephanie (she is Italian) went on a luxury Italian cruise this summer, lucky girl!  She was spoiled with the local ricotta and went on a quest to find a similar quality product here.  Her verdict is Trader Joes!  If you have a store locally, check it out...


I used Buon Appetito, a salt free balanced mix of Greek oregano, basil, marjoram, thyme, rosemary and sage.  This is wonderful in any Italian dish!

Seared Ahi Tuna with Wasabi Gremolata

Seared Ahi Tuna is one of the most delectable dishes you can eat.  It practically melts in your mouth.  Of course I could eat this completely raw.  If you are not a sushi fan, you can of course cook to your liking.  I chose to use Big Easy Bourbon Molasses because of its smoky sweet heat.  Hand blended with granulated blackstrap molasses, demerara sugar, orange zest, bourbon barrel smoked sea salt, garlic, onion, chipotle, paprika and bell pepper.  Amazing on fish, chicken and pork!


I found this amazing Wasabi Arugula at the farmers market.  I have never heard of this variety.  I tastes just like the wasabi you get at a sushi restaurant but without the heat!  Fantastic.



A gremolata is the perfect accompaniment to use the Arugula in, it adds a nice texture to this dish. This version does not have any cheese typically found in this kind of recipe.  You can add parmesan cheese, parsley and garlic and use it to top a pasta.   Delish!


I made sushi rice as a side for this meal.  1 cup of short grain white rice, rinsed really well, 2 cups water.  Cook per directions and then add 2 tbsp rice wine vinegar, 2 tsp sugar and 1/2 tsp salt that you have mixed together.  Stir and you are ready to go!


A chilled glass of Pinot Noir paired perfectly with this meal.

Greek Salad with Grilled Veal

I have absolutely fallen in love with the Mediterranean Rub!  I adore the fresh flavors of the region.  This is the essence of the Mediterranean with herbs, spices and citrus. This blend is great for chicken, fish, pork and beef as a rub. Take your fresh veggies and sprinkle this blend for a full range of flavors. It is a great table condiment without the salt and sugar. Hand blended from thyme, oregano, sage, basil, rosemary, garlic, lemon peel and black pepper.


I made a vinaigrette and seasoned the veal with this rub.  You can substitute veal with chicken and it would still be great.  With almost any spice blend you can make a vinaigrette.  Just us equal amounts of oil to vinegar, I for this recipe 1/3 cup olive oil and a 1/3 cup lemon white balsamic vinegar with 1 tbsp Mediterranean Rub.  Let it sit to soften the dried herbs and enjoy!


This is a really easy meal to make and is so light and flavorful.  Perfect for a summer nights supper.  The veal/chicken can be grilled outside or as I did in a grill pan inside.


I also made a really quick garlic flatbread instead of croutons.  Yummy!


A glass of chilled Chardonnay paired very nicely with this salad!

Seoul City BBQ Chicken Lettuce Wraps

Seoul City BBQ is such a fun spice blend to play around with.  This mix is hand blended with demerara sugar, garlic, onion, sea salt, black pepper, sesame, soy sauce, ginger, Korean chile flakes, orange, turmeric and chives. It is really great on chicken, beef, pork, fish or really good on roasted vegetables too.  Using it is like to travel with your taste buds.  Quickly becoming another favorite!


My kids have been begging me to make Chicken Lettuce Wraps, we love this at P.F. Changs.  This is my version of that dish.  Depending on your love of spicy, use more or less of the sriracha sauce.


An ice cold glass of Chardonnay is very tasty with this dish.

Orange Breakfast Muffins

My girls have been asking me to come up with a quick breakfast they can grab and eat on the way to school.  These muffins are chock full of healthy ingredients and keep their tummies full.  The Orange Zest really brings out the citrus flavors and make the muffins fantastic.  Try it in marinades and dressings too!  I also used a little bit of New Hudson Apple Pie Spice.  This is hand blended with Korintje cinnamon, allspice, nutmeg, ginger root and cardamom.  Fantastic in cookies, cakes, pies, pancakes and french toast.


You can use any nuts you like, I chose almonds because my family likes them.  Walnuts or pecans would be wonderful also.


These muffins are terrific with a cup of coffee!

Good-For-You Orange Chocobutter NoBake Treats

How did we get so close to bathing suit season?  I love chocolate and came across a no bake cookie in an old cookbook and decided to try make these treats a little less un-healthy!  I have always heard that Coconut Oil is good for you, but a little bit goes a long way.  This recipe is truly easy, and so quick to make.  Something yummy to munch on, that you don't have to feel guilty about!


I also added Orange Zest to the mix which adds a really deep and rich orange flavor plus vitamin C which adds to all the other goodness.


These are best when kept in the freezer.  This does not make them too hard, just gives them a really nice bite!

Zahtar Middle Eastern Taco's

I adore playing with new spices!  Zahtar is a Middle Eastern spice blend that has become a new favorite.  It is hand blended from sesame seeds, coriander, sumac, thyme, cumin and black pepper.  It has a distinctive lemony flavor that is derived from the berries of the Sumac bush that grows in the Middle East and in Italy.  This is great on veggies, fish and chicken.


Today I made a fun taco that is so delicious with a new flavor profile.  So fun to experiment!


We sipped an ice cold beer with this meal.

Easy Chicken Pot Pie

Chicken Pot Pie is almost a soup!  As Rachel Ray would say, it is a Stoup (soup+stew).  It feels so good to feed your family something that you have made from scratch.  It is truly so easy to make, and super delicious.


Milford’s Perfect Poultry Seasoning  added so much flavor to this dish.  This is a great seasoning to use all year long.  It is a salt free blend of marjoram, thyme, oregano, sage and rosemary.  Great on grilled chicken or pork!


I chose to use Puff Pastry as a topper for my pot pie.  I really enjoy the flakiness that it creates.  You can also use pie dough.  Cook it the same way.

Tuscan Calzone

My family loves pizza and calzone. Now that the weather is getting a little cooler a comfort dinner is just what the doctor ordered! This is such a fun meal to prepare together as a family. The kids love this because they can choose all of their own fillings and help build their very own calzone!


In this recipe I chose to infuse the dough with some Evening in Tuscany. It adds such an amazing depth of flavor. I made the dough but you can achieve the same flavor profile if you knead the seasoning into a store bought pre-made dough. Just let the refrigerated dough warm to room temperature first.


You can make you own marinara sauce. To make this a quick and easy weeknight dinner, you can use your favorite store bought. You can kick it up a notch by adding a little Evening in Tuscany to freshen and enhance the flavor. I always serve the marinara on the side so it does not make the calzone soggy.


This is a truly easy meal to make and the calzone is a blank slate, your imagination can take it anywhere!

Sheet Pan Chicken Harvest Veggie Dinner

My husband and I went to the Farmers' Market this past Sunday morning. It is always so much fun to walk around and buy fresh ingredients and get inspired to try something new!

I saw a chef on a cooking show make an entire meal on a sheet pan and bake it together to create a quick and delicious dinner. This is my take on that idea. I used the MSC Citrus Sea Salt blend with this meal! So delicious!!!


Don’t be afraid to try new vegetables! I had never purchased Brussel Sprouts on the stalk before. It may look a little intimidating, but so easy. Just use a short knife to cut the “sprout” off the stalk and clean off the outer leaves.

Farmers' Markets are also the perfect place to pick up fresh herbs if you did not grow any at home! We also got the potatoes there. All so fresh. Does not get any better than that!

Easy Spiced Potato Chips

Potato chip are a terrific side dish to soo many meals.  They can get more than a little boring though!  Here is a really quick tip to give you the tasty flavored variety except you make it, so you know how it is spiced.  No chemicals here!  A potato chip is a blank palette.  You can literally use any spice blend that your taste buds desire.  For this example I used It’s All Greek to Me.  Fantastic!

Lena's Quick Pickled Onions

Condiments can make or break a great dish!  I discovered Lena’s Perfect Pickles Pack and decided to have some fun with it.  I really enjoy onions, especially pickled onions.  This is a quick and easy recipe and it will last in your fridge for about a week to ten days.  Try it on sandwiches, burgers and salads.

Grilled Pork Tenderloin Medallions

My husband loves to grill, so I ordered a bunch of new spices.  My package came today and I am trying out the Smoked Tea Rub for the first time.  It smells divine!  I had some pork tenderloin I was planning on grilling so decided to try my new rub with it.  The Smoked Tea Rub added amazing flavors, truly delicious!


I served this with mashed potatoes topped with very thinly sliced green onions.


I enjoyed a glass of Merlot with this meal.

Caribbean Chicken Skewers

A delicious way to enjoy the taste of the islands!  A really fun dinner for the kids to help with.    Quick and easy!  We served this with glazed carrots and a lime cilantro rice.  Just add lime juice and cilantro to cooked rice and fold in.


A Pina Colada goes wonderfully with they meal!
