Sheet Pan Pork Chops & Veggies

I absolutely love making Sheet Pan dinners!  It is so quick and easy not to mention healthy!

Today I made Pork Chops & Roasted Vegetable with Ravensview Rosemary Garlic.  This is such a versatile spice blend, fantastic on veggies, chicken, pork and lamb.  It is hand blended with black pepper,  sea salt, garlic, onion, chives and rosemary.

You can pretty much use any hardy veggies you have on hand.  I used cauliflower, carrots, red onion and mushrooms.  Some other great veggies are potatoes, sweet potatoes, broccoli, squash, bell pepper, poblano or jalapeño peppers to name a few.

You can cook on one or two sheet pans.  I wanted a ton of veggies so I  used two. 

A cold glass of Fat Tire Ale is a perfect match with the meal.

Sheet Pan Chicken Fajitas

I am loving the quick and easy sheet pan dinners!  Today I made a chicken fajitas sheet pan dinner.  I used two 1/2 sheet pans for this but you can combine on one.  I chose to use a mix of peppers; jalapeño, poblano, anaheim and bell pepper.  Depending on your level of spice tolerance you can mix any peppers your taste-buds desire.

Taco Tuesday is such a wonderful blend of chili powder, domestic paprika, granulated onion, cumin, granulated garlic, Mexican oregano, brown sugar, black pepper medium, and cayenne pepper.  It is fantastic in just about any southwestern recipe.

I served this with Black Bean & Corn Salad.  Healthy and light!

A glass of Sangiovese is great with this meal.

Sumac-Mediterannean Sheet Pan Chicken

I love cooking dinner on a sheet pan.  It does not get much easier than that.  This recipe uses Sumac which is very common in the middle east and other countries around the world.  The cooks in these counties use Sumac instead of lemon zest or lemon juice.  I has an acidic lemony flavor that really enhances the flavors of what you are making.

I marinated the chicken in olive oil and Sumac for a couple of hours.  You can do this in the morning and let it marinate until you get home from work, throw it on a sheet pan, and voila.  Dinner!  

I served this with our Israeli Chopped Salad and Zahtar sprinkled pita bread.  Lightly brush olive oil on pita and sprinkle with Zahtar and then bake at 350º until golden brown, around 5 minutes.

A glass of slightly chilled Pinot Noir is great with this meal.

Sheet Pan Chicken Harvest Veggie Dinner

My husband and I went to the Farmers' Market this past Sunday morning. It is always so much fun to walk around and buy fresh ingredients and get inspired to try something new!


I saw a chef on a cooking show make an entire meal on a sheet pan and bake it together to create a quick and delicious dinner. This is my take on that idea. I used the MSC Citrus Sea Salt blend with this meal! So delicious!!!

Don’t be afraid to try new vegetables! I had never purchased Brussel Sprouts on the stalk before. It may look a little intimidating, but so easy. Just use a short knife to cut the “sprout” off the stalk and clean off the outer leaves.



Farmers' Markets are also the perfect place to pick up fresh herbs if you did not grow any at home! We also got the potatoes there. All so fresh. Does not get any better than that!
