South of the Border Mac'n'Cheese

Serves 8


5 Tbsp Butter

5 Tbsp Flour

3 Cups Milk

2 Tsp Taco Tuesday (plus a pinch)

2 Cups Mexican Mix Shredded Cheese

16 oz Penne Pasta

1 Cup Panko Bread Crumbs


Preheat oven to 350.  Boil salted water and cook penne pasta to 1 minute under the recommended time.  When done drain and stop cooking by rinsing in cold water.  Heat a medium sauce pan and melt the butter, then add the flour and whisk until combined.  Next add the milk 1 cup at a time until thick and bubbly.  Now add 2 tsp Taco Tuesday seasoning and cheese.  Stir till melted.  Add the cooled pasta and mix gently.  Pour mixture in a baking dish.  Sprinkle top with the Panko breadcrumbs and a pinch of the seasoning on top.  Bake for 20 minutes and enjoy
