A "cousin" of middle eastern shawarma, tacos al pastor are traditionally made from spit fired pork served with pineapple. At home, use: 2 tbls Al Pastor, 1/4 cup vinegar, 1/2 cup water, 1/2 cup onions and a chopped pineapple. Combine in blender and marinate pork in refrigerator in sealed bag. Serve with pineapple salsa and cilantro.
