Thai Curry Peanut Noodles

Ingredients: 

1 Orange Pepper (shredded) 
1 Red Pepper (shredded) 
1 Yellow Pepper (shredded) 
2-3 Carrots (shredded ) 1 Bunch Chopped Green Onion 
1 Bunch Lightly Chopped Cilantro 
3-4 Shredded Zucchini or Yellow Squash (noodles) 
1/2 Cup of Toasted Peanuts 

Preparation: 

Combine all of the above ingredients in a bowl. 

Then prepare Sauce: 

2 cups Coconut milk  
2 tbsp peanut butter 
1 teaspoon of ground ginger 

 Blend/whisk all ingredients. Mix well and add to your veggies.

 Let cool in the refrigerator for at least 30 minutes. 

 Enjoy!
