Roasted Garden Glory Cauliflower Steaks

It seems that Cauliflower anything these days is very trendy!  Low carb, low calorie and very nutritious not to mention great flavor and texture.  What is not to love!


I have been wanting to try cauliflower steaks for quite a while.  One of the the newer spice blends that I have purchased is the Garden Glory.  This has a little touch of molasses helps coax out the carmelization, it is hand blended from garlic, salt, paprika, onion, black pepper, thyme, red bell pepper, molasses, oregano, serrano and vinegar.  It is fantastic on roasted root veggies like sweet potatoes and onions. Bean Salad with Honey Chipotle Vinaigrette

My girls asked me to come up with something filling and healthy that they could have for lunch and snack on after school.  A bean salad is the perfect quick and easy meal.  Protein, lots of veggies with a tangy delicious vinaigrette.  Lasts in fridge for almost a week, just stir before serving.


I did a three bean combo and truly you can use any combination of beans that appeals to you.  Same with the veggie combo that you choose.  I did a Southwestern spin on this using Honey Chipotle in the vinaigrette.  Honey Chipotle is one of my families favorite blends.  It is hand blended using granulated honey, sea salt, chipotle powder, granulated onion, Spanish paprika and Italian seasoning.  The combination of smokey sweet heat is amazing on salmon, shrimp, chicken, veggies and more.


Now of course you can make your own version of bean salad using beans and veggies of your choice and any spice blend that sounds good to you.  See this handy chart to make your own vinaigrette.

Zucchini Carbonara with Shrimp

My family has fallen in love with Zucchini noodles!  There are so many different spiralizers out there, you should try one!


For this meal I pretty much used veggie leftovers and shrimp from the freezer.  You can use chicken or no meat at all.  Typically carbonara has bacon, but I did not use today.  Quick, easy and light, great for a weekday meal!


I decided to use DiDad’s Passion for Pepper in this dish.  It is hand blended from Black pepper, granulated onion, granulated garlic, celery seed and sweet bell pepper.  This blend is great on steaks and roasts, or just keep on table and sprinkle it on just about anything you would use pepper for.


A glass of Merlot is perfect with this dish!

Pinto Beans with Adobo Lime

I have a new toy!  The Instant Pot…  There has been so much talk about this product I had to see what it was all about.  I adore this pot!  I did not think I would, but it adds so much flavor to what you are cooking, it is hard not to love.  The high pressure drives the flavor into food.  I cooked these beans from dried to fabulous in an hour.


I used Adobo Lime to season my beans.  Adobo Lime is hand blended from fennel seed, cumin, coriander, black pepper, garlic, Mexican oregano, lime zest, kosher salt, thyme and rosemary.  Great in green chili, soups, vegetables.  One of Milford Spice Company’s all-time Best Sellers!

Zucchini Formaggio

I love wandering the Farmers' Markets to see what strikes me for a healthy summer dinner.  Today the beautiful zucchini spoke to me.  I decided to play with my spiralizer using an attachment I had not tried before.  I used the large core blade to my Kitchen Aid Spiralizing attachment.


I used Buon Appetito to season my zucchini.  This fabulous Italian blend is a balanced mix of Greek oregano, basil, marjoram, thyme, rosemary and sage.  Great in anything from pasta sauces to baking in bread.  


A nice glass of Shiraz pairs really well with this dish.

Garden Glory Marinated Tomatoes

My garden is producing a lot of tomatoes.  I love it!  I wanted to make a side dish using my Napa Grape Hybrid tomatoes.  These are so sweet and have a fabulous texture.  Soo good!



Garden Glory is a new spice blend consisting of garlic, salt, paprika, onion, black pepper, thyme, red bell pepper, molasses, oregano, serrano and vinegar.  A delicious blend for roasted or grilled veggies.  A little touch of molasses helps coax out the caramelization.  We especially like it sprinkled on roasted root veggies like sweet potatoes and onions, cauliflower. 


You can use Marinated Tomatoes in sandwiches, salads, omelets, potato salad, or as a bite by themselves.



You can use a larger tomato as well, like these Cherokee Purple.  


A chilled glass of Sauvignon Blanc goes very well with this dish.

Grilled Mixed Veggies with Up North Grilling

Here is a fabulously simple summer grilled veggie recipe.  You can use pretty much any mix of fresh veggies you like.  I used a grill basket but this works with any type of mesh grill accessory you may have.


I used Up North Grilling in this dish.  This blend is made of of coriander seed, coarse black pepper, red bell pepper, green bell pepper, onion, garlic, dill, coarse sea salt, caraway seed, thyme and lemon peel.  This blend is fantastic on grilled veggies.  Great on Corn on the cob.  Wonderful on steak, pork and chicken.


A glass of cold Chardonnay is a perfect pairing with this dish.

Grilled Corn

Nothing screams summer like a grilled freshly picked corn on the cob!  Here in Colorado they grow them by the ear…  LOL…  We love freshly grilled corn in salads, salsas, black beans and of course on the cob!


Up North Grilling is a fantastic blend of coriander seed, coarse black pepper, red bell pepper, green bell pepper, onion, garlic, dill, coarse sea salt, caraway seed, thyme and lemon peel. This blend is great on just about anything savory.  Veggies, chicken, pork, beef and fish.

Shredded Potato Kugel Casserole

I have always loved egg noodle kugel.  My friends describing passover to me told me that that you can do something similar using shredded potatoes.  It has the same taste profile as a latke but in a casserole form.


It turned out really well!  DiDad’s Passion for Pepper is a fabulous hand blended mix of black pepper, granulated onion, granulated garlic, celery seed and sweet bell pepper.  This is wonderful on just about anything!


A glass of Pinot Noir paired very well with his meal.

Black Bean & Corn Salad

This is great side dish to go with just about any southwestern dish.  It is a salsa/salad.  You can use it to top a dish as a salsa, or serve as a salad on the side.  It stores well in fridge so it lasts for several days.  You can add tomatoes, but then it would be best eaten right away.  Tomatoes deteriorate very rapidly in fridge, refrigeration damages the membranes in the tomato and causes it to taste gritty and mealy.


Taco Tuesday is such a wonderful blend of chili powder, domestic paprika, granulated onion, cumin, granulated garlic, Mexican oregano, brown sugar, black pepper medium, and cayenne pepper.  It is fantastic in just about any southeastern recipe.


A glass of chilled Chardonnay is great with this meal.


I used some leftover Black Bean & Corn Salad to top a plate of Nacho's for lunch the next day.  So yummy!

Israeli Chopped Salad

Mediterranean food always tastes so fresh and healthy!  This chopped salad is no exception.  Luscious cucumber, tomato, red onion, feta cheese, parsley mixed with Zahtar, lemon juice and olive oil.  Soo delicious.  My kiddos adore this.  Great for a quick meal on its own or serve with Sumac-Sheet Pan Chicken.


Zahtar is a middle-eastern/mediterranean spice mix that is hand blended from sesame seeds, coriander, sumac, thyme, cumin and black pepper.  This is fantastic on chicken, fish, vegetables, bread and dips (mix with Feta cheese and olive oil for a great dip with pita chips).


We enjoyed a cold glass of chablis with this salad.

Heirloom Tomato Tart

I love going to the Farmer’s Market! It is so much fun to walk around to see what is new and what I must try.  Today I decided that tomatos are my must have.  Todd from Todd’s Heirloom Tomatoes is a tomato aficionado!  He and his wife Tonya are really delightful and full of knowledge.  Their tomatoes (and other produce) are the top of the line quality and just amazing flavor.  You can find them at a variety of our local markets.  I visited them at the Parker Sunday Market on Main Street.






I am making a Tomato Ricotta Tart.  This a simple but oh so tasty dish.  Because there are so few ingredients, the quality of these ingredients are imperative.  Please get the best you can possibly find and you will not be sorry!  Use a full fat Ricotta, imported from Italy if you can find.  My beautiful friend Stephanie (she is Italian) went on a luxury Italian cruise this summer, lucky girl!  She was spoiled with the local ricotta and went on a quest to find a similar quality product here.  Her verdict is Trader Joes!  If you have a store locally, check it out...


I used Buon Appetito, a salt free balanced mix of Greek oregano, basil, marjoram, thyme, rosemary and sage.  This is wonderful in any Italian dish!

Scalloped Mexican Potatoes

Today I wanted to try something new and different.  Potatoes can be a little bland so I kicked it up a notch!  Using Milford’s Mexican Blast to season the potatoes added such an amazing favor.  Milford's Mexican Blast is a delicious blend of chile peppers, garlic, onion, cumin, Mexican oregano and other spices.


Adding the poblano peppers made the dish colorful and taste fantastic!  Mexican Crema is available at regular grocery stores and is richer that regular cream.


I paired this with Grilled Mexican Blast Carne Asada.  Really delicious!

Delish Potato Salad

Today is a perfect spring day!  So warm and everything in starting to grow and bloom.  Definitely put me in the mood for some summer grilling!  What goes better with grilled chicken than a potato salad!  I have really enjoyed the Fish Delish seasoning all winter and decided to try a potato salad dressing using the suggestion on the spice description.  It was so flavorful!  Yum!  My family loved it hope your does too!


We enjoyed a Snapshot beer with this meal!

Barbie’s Famous Cheesy Potatoes

It’s a well-known fact that cheesy potatoes vary from family to family. There is always debate as to the topping and the contents. My recipe uses a topping with corn flakes and others will disagree and insist on using potato chips. Mine also features the shredded Ore-Ida potatoes while many will argue they prefer the cubed frozen potatoes. All I know is I tried this recipe in 1979 and will swear that my recipe is by far the best you’ll ever eat. I have made this countless times. I have tasted many a variety of cheesy potatoes at pot-lucks and have never found one I like better. With that being said, let me also mention a recent addition to the long-time recipe – Milford Spice Company’s Awesome Onion Soup(which isn’t a soup, but is instead a spice packet).
