Crockpot "Carnitas" Style Chicken Taco's

Who doesn’t love carnitas!  Tender and crispy and full of flavor.  I love this recipe because it super easy and so delicious.  Using chicken makes it leaner than pork or beef but equally as flavorful.  I used frozen chicken breasts and frozen chicken thighs, seasoned with Taco Tuesday, cooked in the crockpot all day and finished in the oven. 


A family favorite to be sure!  Great weekday meal!


Serve it up with all the usual taco accompaniments.  I made a quick blender salsa using a can of chopped tomatoes, 1 bunch cilantro, 3 jalepenos and 1/2 onion.  Blend well, I used a big pinch of Lemon Sea Salt to finish.  Yum!


I also made a quick black bean side dish.  Recipe inside using Honey Chipotle to season beans.  So good!


A bottle of Tecate did this meal justice!

Mark's Espresso Grilled NY Strips with Smashed Potatoes

Every Friday night we grill a steak.  We have fallen in love with Mark’s Espresso Rub!  It adds a wonderful depth of flavor that really accentuates the flavor of the grilled steak.  It adds a faint bitter undertone that is absolutely addicting!


I served this with a “smashed” potato which is a play on the baked potato but much faster to cook and a salad.

TUTORIAL - Sunday Sauce with Meatballs

Sunday sauce (or gravy as some call it) is a long standing Italian-American tradition.  In Italy, many years ago, very poor Italian women made their sauce mostly with tomatoes and vegetables and if they were very lucky pork.  After immigrating to America most found that meat here was so much less expensive, and the addition of beef to the sauce became a symbol of prosperity! 


Italian Mama’s and Nona’s put the sauce on first thing in the morning and it puttered all day while the rest of the family chatted and caught up.  Each family adds a little something unique to their sauce so really no two family recipes would be the same.


There are many varieties of pasta available to us today.  Spaghetti is traditionally used, but any shape you like will work.


Today, most families are too busy to be cooking all day!  This is a quicker version of a Sunday Sauce.  Though tradition has it that it only gets richer the longer it simmers…

Spatchcocked Chicken

Spatchcocking or butterflying is a preparation that removes the backbone and flattens the bird out.  This method cooks the chicken much quicker than whole, and allows all of the skin to get golden brown and crispy, not just the the breast.


Fish Delish is quickly becoming a family favorite.  It is so versatile and like the name implies, delicious!  I used it to season the chicken and as part of the seasoning for the potato salad.


We were in the mood to grill today because it feels like spring and we wanted a summer meal!  We grilled our chicken using this method and served it with Wordhouse Wow Grilled Corn and Delish Potato Salad.

Wordhouse Wow Grilled Corn on the Cob

Delish Potato Salad

Today is a perfect spring day!  So warm and everything in starting to grow and bloom.  Definitely put me in the mood for some summer grilling!  What goes better with grilled chicken than a potato salad!  I have really enjoyed the Fish Delish seasoning all winter and decided to try a potato salad dressing using the suggestion on the spice description.  It was so flavorful!  Yum!  My family loved it hope your does too!

South of the Border Mac'n'Cheese

My children adore Mac’n’Cheese.  This recipe is a delicious twist on an old favorite!  The Taco Tuesday adds a wonderful south of the border taste and the Panko breadcrumbs a crisp topping.  Great combination!  Equally good on a cold or hot day!  Quick and easy!


A glass of Chardonnay is really tasty with this meal!

Caribbean Chicken Skewers

A delicious way to enjoy the taste of the islands!  A really fun dinner for the kids to help with.    Quick and easy!  We served this with glazed carrots and a lime cilantro rice.  Just add lime juice and cilantro to cooked rice and fold in.


A Pina Colada goes wonderfully with they meal!

Crockpot Turkey Chili

Chili has to be one of the most perfect comfort foods!  It is so versatile and simple to make!  If freezes really well so I always make a very large pot of it and freeze in family size portions for a quick meal when I need it!

Creole Chicken Bacon Corn Chowder

I love soup any time of the year!  It is so light and delicious.  The Louisiana Creole seasoning is a fabulous addition.  I love it sprinkled over almost anything!  A flavorful addition to this soup!

Mexican Blast Flank Steak Taco's

I grew up in Sweden.  Our meals were fairly bland, consisting of a lot of fish and meats.  I was not introduced to Mexican food until my mid-teens when we moved to California, and now I cannot get enough of this wonderfully flavorful food!  Mexican Blast exemplifies the amazing flavors in Mexican cooking.  My family loves it!


A good bottle of Corona with a lime is fabulous with this dish!

TUTORIAL - Flank Steak Tutorial

Flank steak is a cut of beef from the belly section of the animal.  This cut is very flavorful but if not treated properly can become very tough!


This tutorial will demonstrate two ways or preparing this cut of meat.  Both methods involve grilling.  Our first meal is Grilled Flank Steak with Roasted Vegetables and a Balsamic Reduction.  Our second meal is Grilled Stuffed Flank Steak with Garlic Mashed Potatoes.


Both recipes use Mark’s Espresso Rub to flavor the flank steak.  This seasoning is hand blended with natural sugar, sea salt, black pepper, ground espresso beans, onion powder, Spanish paprika and cayenne pepper.  The perfect marriage of spices to make the flank steak sing!


It is important when cooking this cut of beef to cook it on a very hot grill for a short time.  As with any meat, it is also imperative to let it rest and redistribute all the wonderful juices before cutting.  Also, the need to cut against the grain is really important with this cut because otherwise the fibers will be tough and chewy.


Many cultures use the flank steak because it is economical and delicious.  You will find it used a lot in Mexican cuisine in fajitas and tacos.  Asian cuisine in stir-fries.  In Argentina it is grilled and served with a Chimichurri sauce (click here for a link to a similar recipe on our recipe blog).

20 Minute Skillet - Herbed Chicken Vegetable Pasta

Spring is my girls’ gymnastics competitive season, so we are always running at full speed.  Having a dinner that is simple and quick to make, is truly a sanity saver!  Using the Roasted and Minced Garlic instead of fresh garlic adds such a depth of flavor to this and any dish! This 20 Minute Skillet is delicious and healthy!  The Fish Delish seasoning herb blend is fabulous, also great on pork and makes a great dressing!  You can pretty much use any vegetables that you have on hand to substitute with or add to.  You can also substitute the fettuccine pasta with spaghetti.

20 Minute Skillet-TexMex

This is truly a 20 Minute Skillet wonder!  It does not get any easier than this!  I have teenage athletes who have become incredibly picky eaters and they inhaled this meal!  It has great texture and flavor, thanks to the Adobo Lime seasoning.  It tastes fresh and rich (even though it is pretty low fat and healthy).  Perfect for those days we don’t have as much time in the kitchen as we wish!

Honey Chipotle Salmon

Salmon is one of my absolute favorite fish!  The Honey Chipotle seasoning is THE perfect seasoning for salmon.  It adds a sweet and spicy element that is truly out of this world!  The honey component caramelizes this fish so beautifully!  I served the salmon with a light side salad, garlic bread and lentils. This is a quick and easy meal to make that the whole family will love!


A glass of Pinot Grigio is a great complement to this dish.
