3 Chicken Breasts, Sliced Into Thin Strips
1/2 Yellow Onion, Diced Fine
1 Tsp Roasted and Minced Garlic Pack
1 Tbsp Olive Oil
1 Tbsp Fish Delish Seasoning
1 Cup Mushrooms, Halved
2 Zucchini, Sliced and Halved
3 Cups Fresh Spinach
1 Cup Grape Tomatoes, Halved
1/2 Cup Chopped Parsley
2 Cups Chicken Broth, Low Sodium
2 Servings of Fettuccine Dry Pasta, (about 1” diameter bunch) Broken into 3 pieces.
Heat a large skillet, preferably cast iron to medium high heat.
Add the olive oil, onion and the Roasted and Minced Garlic. Next add the broken pieces of dry fettuccine noodles and sauté for 5 minutes until the pasta starts to get a golden brown color.
Now lets add the chicken and stir. Add the chicken broth and place a lid on skillet and simmer for 5 minutes.
Remove lid, and add all of the vegetables and the Fish Delish Seasoning. Give it a quick stir to fold in veggies and replace lid and simmer 10 minutes.
If desired, you can top with some chopped parsley and a little shredded parmesan cheese.
