2 Lbs Pork Tenderloin, Sliced Thinly
2 Heaping TBSP Tantalizing Thai Seasoning
4 Carrots, Juilienned
3 Cups Broccoli Florets
2 Tbsp Coconut Oil (or Canola Oil)
1 15 oz Can Lite Coconut Milk
1 Tbsp Rice Wine Vinegar
1/2 Cup Green Onions, Chopped
1/2 Cup Peanuts
2 Tbsp Soy Sauce
2 Tbsp Sriracha Sauce (if you like it spicy)
Salt to Taste
Cooked Rice of Pad Thai Noodles
Add your oil to a large frying pan and heat over medium.
Next add your sliced pork and Tantalizing Thai seasoning. Stir for 6-8 minutes until it is browned.
Add the julienned carrots and coconut milk, stir. Add the broccoli and gently stir. Put lid on the skillet and simmer for 6-8 minutes.
Right before you serve, stir in the soy sauce, rice wine vinegar and, if you want, the Sriracha sauce.
Plate on top of either rice or noodles, and sprinkle with green onions and peanuts!
