
Serves 2-4
1 Lb Frozen Seafood Blend
1/2 Onion, Diced
4 Garlic Cloves, Minced
1/2 Cup White Wine
3 Tbsp Olive Oil
1 Cup Chicken or Fish Stock
1 Tbsp An Evening in Tuscany Seasoning
3 Cups Fresh Tomatoes, Diced
1/4 Cup Parsley, Chopped
Cooked Pasta - We used Linguini
Gremolata:
1/4 Cup Parlsy, Chopped
Lemon Zest from One Lemon
4 Cloves Garlic, Minced
Heat the olive oil in a large skillet. Add the diced onion and state until the onion is translucent. Next add the tomatoes, parsley, An Evening in Tuscany, wine and stock, simmer 5 minutes. Add the frozen seafood mix and simmer gently 10 minutes.
While that is simmering, make the Gremolata. Add all ingredients in a glass bowl, stir and set aside till ready. This is soo good!!!!
To serve, add a serving of pasta to plate, next add the Pescatore and top with a tablespoon of the Gremolata.
Serve with crusty bread!
