4 Servings
1 14oz Can of Black Beans, Drained & Rinsed
1 Cup of Corn, I used Frozen Roasted Corn
1 Lg Red Bell Pepper, Diced
1 Med Red Onion, Diced
3 JalapeƱos, Diced
1 Bunch Cilanto, Chopped
1 Tsp Taco Tuesday
1/4 Cup Olive Oil
Preparation:
Place rinsed beans in a bowl and add the rest of the veggies.
Mix olive oil and Taco Tuesday in a small bowl and add to veggies.
Gently combine. Let this sit on the counter for about 30 minutes for flavors to develop.
