(Serves 4)
Ingredients:
2 (14-ounce) cans black beans, rinsed and drained, divided
3 tablespoons mayonnaise
1/3 shredded cheddar cheese, extra sharp
1/3 cup plain dry bread crumbs
2 teaspoons Milford Spice Company’s Fabulous Fajitas
1/4 teaspoon cayenne
2 jalapeños (seeded)
1/4 cup finely chopped cilantro
3 tablespoons vegetable oil
1 avocado, sliced thin
Directions:
- Rinse and dry black beans, place in mixing bowl
- Place 1 can of beans, jalapeños, mayonnaise, bread crumbs, cayenne, and MSP’s Fabulous Fajitas spice in food processor and pulse until purée forms
- Transfer to a bowls and mix in cilantro, cheddar cheese, and additional can of beans
- Form mixture into patties (approx. 4)
- Warm vegetable oil in skillet and cook burger patties until outsides are crisp (about 2 minutes per side)
- Top with sliced avocado, additional cheddar cheese, and serve with flour tortillas
