Caribbean Chicken Skewers 

Serves 6-8

2 Lbs Chicken Breast

2 Tbsp Canola Oil

2 Tbsp Caribbean Rub

1 Fresh Pineapple

1 Onion

2 Red Bell Peppers

Let’s begin by cubing the chicken breasts in fairly large pieces. Place the chicken in a bowl and toss with canola oil and 1 1/2 Tbsp Caribbean Rub.  While that is marinating for 30 minutes, pre-heat grill to medium.  If using wood skewers make sure they soak in water while the chicken is marinating, this prevents them from burning.  Cut the bell pepper, pineapple and onion into pieces about the same size as chicken.  Now it’s time to skewer.  Starting with a piece of pineapple, slide  it to the end, alternate chicken, fruit and vegetables.  Sprinkle completed skewers evenly with the remaining 1/2 Tbsp Caribbean Rub.   Grill for about 15 minutes turning every 3 minutes.  Let rest for 10 minutes.

Serve with rice and lime wedges and enjoy!
