4 Cups Shredded Cauliflower
1 1/2 Tbsp Evening in Tuscany
2 Hot Italian Chicken Sausage Links

1 Cup Shredded Mozzarella
1/2 Cup Bread Crumbs
Parmesan and Parsley for Serving
14.5 Oz Can of Tomato Sauce
3 Tbsp Tomato Paste
1 Tbsp Evening in Tuscany

Let us begin by creating our super easy marinara sauce. Add tomato sauce, tomato paste, Evening in Tuscany and sugar (to cut acid in tomatoes) in a sauce pan. Stir to combine...
and simmer on low till ready to serve. 30-45 minutes.
Next, let us heat a skillet on medium heat, remove the sausage from casing, using a wooden spoon or nylon tool to create crumbles, and cook sausage for 5 minutes till cooked through.
Add the cauliflower, about 1/2 cup of your marinara sauce and stir to combine, cook for 6-8 minutes till cauliflower is tender.
Add mixture to a large bowl, now add the mozzarella, Evening in Tuscany and combine.
Use a 3 tbsp scoop to create your balls, scoop into your hand and press to make it tighter.
Next roll in egg,
and then in bread crumbs.
Preheat your air fryer to about 375º.
Spray your Arancini balls lightly with cooking spray and add to air fryer basket.
Airfry for about 10 minutes, make sure to turn them several times during cooking.
Remove carefully. Serve them sitting in a little marinara, sprinkle with parmesan cheese and chopped parsley.
