Cauliflower Crust Pizza:

Makes about 4 personal size pizzas
2 heads of cauliflower
2 Eggs
1 cup Italian blend shredded cheese
1 Tablespoon Milford Spice Company Johnny Pizza

Trim cauliflower and process with food processor to a rice-like consistency
Place in microwave safe container and heat on high for 8 minutes
Allow to cool until you can handle it, then place in a cheesecloth and squeeze as much liquid out as possible.  (We use a manual bar style juicer to get a good squeeze,
the crust will hold together much better if you start with well squeezed cauliflower)
Place in mixing bowl and add Johnny Pizza, cheese and eggs.  Combine to form a dough.

Preheat oven to 425 degrees.

With the dough you may form one crust or split to form individual pizzas.  We have found the easiest to manage is to form individual pizzas.

We pressed the dough out into round, pizza like shapes with our hands, it is tough to "roll" with a pin.  We used a greased piece of parchment paper and placed it on a cookie sheet.  Be sure to get the crust pretty thin.  Keep pressing!

Cook for approximately 8 minutes, then flip.  Bake another 4-5 minutes and remove.

Add your favorite sauce (See Johnny Pizza Sauce), and your favorite toppings.  I then place back in for a few minutes to get the veggies cooking, and then add mozarella cheese for the last few minutes.
