Serves 4


4 Cups of Water

1 Tsp Salt

1 Cup Yellow Corn Meal

3 Tbsp Butter

1 Cup Shredded Mexican Mix Cheese

1 Tbsp Cha Cha Cha Chipotle 


Preparation:



In a 2 quart sauce pan over medium-high heat, bring the water to a boil then whisk in the polenta.  Keep whisking until there are no lumps.  Add the Cha Cha Cha Chipotle, and stir in.




Simmer on a low heat until the polenta has thickened, around 20 minutes.  Stir a few times to ensure that is doesn’t stick.


When the polenta is nice and thick, turn heat off and add the 3 tablespoon of butter and gently stir in.  Next add in your cup of cheese and stir.  If it gets too thick for whist you can use a spoon.



You can change the recipe by using different spices, cooking liquids and cheeses.  The ratio is always 4:1 liquid to corn meal.
