2 Lbs Red Potatoes, rinsed and halved

4 Stalks Celery

1/2 Red Onion

5 Slices of Bacon

1/2 Cup Olive Oil

1 1/2 Tsp Fish Delish

3 Tbsp Red Wine Vinegar

1 Tsp Grainy Mustard

Start by making the dressing for the potato salad.  Add olive oil, red wine vinegar, mustard and the Fish Delish seasoning to dressing a bowl and whisk until it emulsifies (comes together).  Set aside till we need it.  

Boil your potatoes until they are just fork tender.  Drain and set aside to dry out a little. Then cut them into 1/2” pieces.

Cook the bacon slices until they are crispy, set aside.  Crumble.

Sauté the onions in the bacon grease until they are soft, about 5 minutes.  This adds another layer of amazing flavor.

Now add the celery to a bowl, place potatoes and onions on top of that.  Pour on the dressing and gently fold to combine.  Top with the crumbles bacon!

Serve immediately or store in refrigerator until ready to serve.
