Serves 4-6
Ingredients:
2 Pork Tenderloins
3 Tbsp Mark’s Espresso Rub II
2 Tbsp Olive Oil or Canola Oil
Smashed Potatoes
Steamed Veggies of Your Choice
Au Jus or other Gravy
Preparation:
Preheat oven to 350º.
Remove your pork tenderloins from package and rinse with cold water and dry with a paper towel. I like to leave what little fat is left on these because they are such a lean cut, it will melt off. Place them on a sheet pan and rub each with a tbsp oil Then rub each loin with 1 1/2 tbsp Mark’s Espresso Rub II. Let sit at room temp with dry rub for an hour.
Place sheet pan in pre-heated oven and cook for about 45 minutes until pork reaches at least 145º. Let it rest 5-10 minutes before slicing.
Slice thinly and serve with potatoes of gravy. Truly so simple and sure to become a family fall favorite!
