Serves 4


1 Lb Ground Lamb

1-2 Tsp It’s All Greek To Me

2 Tbsp Canola Oil

1 Egg

2 Cloves of Garlic, Minced

1/3 Cup Mayonaise

2 Tbsp Chopped Green Olives

4 Ciabatta Rolls

1 Cup Arugula

1/2 Small Cucumber, Sliced Thinly

1/3 Cup Feta Cheese

A cast iron skillet would be the best pan to use if you have one. If not, any heavy bottomed skillet will do.


Let start with making the olive aoli. Just mix the olives and the mayo together and keep cold in fridge. The olives will season the mayo.

Add the canola oil to your pan and heat.

Next lets make the burger mix. Combine the ground lamb, It’s All Greek To Me seasoning, minced garlic and egg. Form this mixture into four square burgers (because I am using a square ciabatta roll) and add into your hot pan. Cook about 4-5 minutes per side. Remove the from the pan and let them rest about 5 minutes.

While the burgers are resting, very carefully use a paper towel to wipe some of the grease out of the pan. Slice the ciabatta roll in half and place cut side down into hot pan and toast slightly.

No lets assemble the burger. Starting from the bottom: place the bottom half of bun on plate, add the aoli, next add the sliced cucumber, then add some Lena’s Quick Picked Onions, add the arugula, add the burger patty and top with the feta cheese and top piece of bun.

Serve with Easy Spiced Potato Chips.
