Serves 6
2 1/2 lb Flank Steak
2 tbsp Olive Oil
Scant Finishing Salt
Mashed Potatoes
Chimichurri Sauce
Preparation:
Start off by drying the flank steak with a paper towel. Rub both sides with olive oil and generously sprinkle with the Adobo Lime seasoning. Let dry rub marinate for one hour on a plate on the countertop. This will ensure that the flavor is permeated and that steak is at room temperature which will allow the meat to cook evenly.

Grill steak on a medium hot grill 6-8 minutes on each side for medium rare. Remove meat and allow it to rest for 10 minutes. Slice against the grain and serve on top of mashed potatoes top with chimichurri sauce. An absolutely amazing combination of flavors!
Chimichurri Sauce
Serves 10
1 1/2 cup Parsley
1 bunch Cilantro
2 tbsp fresh Oregano
1 large Shallot
1/4 cup Red Wine Vinegar
1/3 cup Olive Oil
Pinch of Sea Salt
Dash of Pepper
Add all ingredients in a food processor until combined. About 30-45 seconds.

I made this over the weekend. Very good. Love the spice rub for the steak and the Chimmichurri sauce was perfect paired with the steak and mashed potatoes. A big hit with my family!!
