1 Pork Tenderloin, About 1 Lb
Cooking Spray
1 1/2 Tbsp Smoked Tea Rub, Placed in a Shallow Bowl
Pinch of Fleur de Sel
Preheat your grill with burners on one side to medium hot and the other burner set on low.
Lay the pork on a cutting board and cut the tenderloin into 1 1/2 inch thick medallions. Before separating spray the outside of the pork with the cooking spray. Roll the oiled edges into the Smoked Tea Rub to coat all around the edge. Repeat with remaining pieces.
Place the the tenderloin pieces on the hotter part of the grill. Grill until you have nice grill marks on both sides. About 3 minutes per side. Move the medallions to the cooler part of the grill, turn off that burner and close cover, and grill an additional 10- 15 minutes. This is indirect heat grilling.
When thermometer reaches 140ยบ, remove from grill and let the meat rest 5-7 minutes.
I sprinkled a pinch of Fleur de Sel on top of medallions to finish it off! So pretty and delicious!
