Roasted Leg of Lamb

Leg of Lamb is a very traditional Easter meal. Though it is fabulous at any time—our Ravensview Rosemary Garlic is a perfect complement to the lamb, really enhancing the delicate luscious flavors! Hand blended from cracked black pepper, rosemary, roasted garlic flakes, chives and sea salt.

This recipe is super simple to make. Lamb can seem overwhelming and difficult to make, but we promise, it is not. Roasted fingerling potatoes and asparagus is a great accompaniment for this dinner. We used Herbes de Provence to season the potatoes.

While the lamb is resting, there is a Popover biscuit recipe to make to round out your meal. We used a little Wordhouse Wow to add flavor to the popovers, the tarragon in this blend is fantastic.

We hope you enjoy!

Meatless Mushroom Lasagna

Recipe courtesy of Pat Bafile, P. B. Photo/Graphics.

Lasagna are a type of wide, flat pasta, possibly one of the oldest types of pasta. Lasagne, or the singular lasagna, commonly refers to a culinary dish made with stacked layers of pasta alternated with sauces and ingredients such as meats, vegetables and cheese, and sometimes topped with melted grated cheese.

Typically, the cooked pasta is assembled with the other ingredients and then baked in an oven. The resulting lasagne casserole is cut into single-serving square portions. Here is a recipe for a delicious Meatless Mushroom Lasagna, incorporating the versatile Milford Spice Company's An Evening in Tuscany.

Slow Cooker Beef Brisket

Recipe courtesy of Pat Bafile, P. B. Photo/Graphics.

Brisket is a cut of meat from the breast or lower chest of beef or veal. It is usually sold boneless. Because brisket is a tough cut of meat, it's best when braised (that is, simmered in a small amount
of liquid), either in the oven, the slow cooker, or on the stove top. Two different cuts of brisket are available. The beef brisket is one of the nine beef primal cuts, though the precise definition of the
cut differs internationally. The meat must be cooked correctly to achieve a tender result.

Passover Brisket

I think there is nothing more fun than to travel the world and different cultures by cooking their foods. Today I really wanted to taste a Passover Brisket. I have many Hebrew/Jewish friends and this is a compilation of what they described to me.

What is there not to love about a yummy beef brisket? Especially when you season it with Mark’s Espresso Rub II. The deep richness of coffee combined with the brown sugar provides an ideal caramelized crust on your steak. Got a little kick! DELICIOUS on beef ribs! Ancho chile powder, ground espresso beans, Spanish paprika, brown sugar, yellow mustard, sea salt, black pepper, Mexican oregano, coriander, ginger root and chile de arbol powder.

I served this with a Potato Kugel Casserole.

A glass of Merlot paired very well with his meal.

Shredded Potato Kugel Casserole

I have always loved egg noodle kugel.  My friends describing passover to me told me that that you can do something similar using shredded potatoes.  It has the same taste profile as a latke but in a casserole form.

It turned out really well!  DiDad’s Passion for Pepper is a fabulous hand blended mix of black pepper, granulated onion, granulated garlic, celery seed and sweet bell pepper.  This is wonderful on just about anything!

A glass of Pinot Noir paired very well with his meal.

Baked Chicken

Recipe courtesy of Pat Bafile, P. B. Photo/Graphics.

A true classic home-cooked dish. This recipe tastes like Mom's chicken. Using the right whole chicken is key. I used an Air-chilled Chicken. No need to worry about it being dunked in chemicals or injected with solutions and no antibiotics used. Add what you need under the skin. It will taste like real baked chicken should.

Lamb Loin Chops with Garlic and Lemon

Recipe courtesy of Pat Bafile, P. B. Photo/Graphics.

Lamb loin chops contain part of the backbone. Muscles include the eye of the loin, separated from the tenderloin by T-shaped finger bones, and the flank. Lamb loin chops are bigger than rib chops. They do very well with hot, fast, dry methods of cooking, such as grilling or broiling. This recipe uses Milford Spice Company's It's All Greek to Me and are best cooked in a cast iron skillet.

Arborio Rice Dressing

Recipe courtesy of Pat Bafile, P. B. Photo/Graphics.

This recipe is my mom's Rice Dressing and it's a great side dish. She would make a strong tasting homemade Chicken Broth for this recipe. There is lots of chicken fat that adds a smooth richness to this dish. I changed the rice from a standard rice to Arborio. It is great with Baked Chicken or Pork Roast. You can use the leftover rice by making rice balls or patties with Panko bread crumbs the next day.

Roasted Pumpkin Seeds

Pumpkin seeds are the perfect blank canvas for any seasoning. So simple to make and they are healthy and delicious. Great with a cold beer as you are passing out candy, or fantastic as a part of your Thanksgiving appetizer spread.

Today I chose to use Honey Chipotle. This is hand blended with granulated honey, sea salt, chipotle powder, granulated onion, Spanish paprika and Italian seasoning. Wonderful on salmon, shrimp, veggies, chicken, pork and popcorn! Sweet with a little bit of heat! Absolutely fantastic!

Mix raw cleaned pumpkin seeds with olive oil if you are using a savory spice and melted butter if you are going to the sweet side.

The most important part of getting crispy, crunchy seeds is to clean them really well and to boil them. It seems like an unnecessary step but this actually par cooks the seeds and ensures that they cook fully, when baked. Make sure to display your pumpkin!

Any cold beverage is fantastic with this treat!

Homemade Corned Beef Brisket

Boiled brisket with potatoes and cabbage is an Irish-American dish that is widely enjoyed on St. Patrick’s Day. The flavors of the pickled brisket are so delicious! I find that the mass produced pre-packaged briskets you buy at the grocery stores are over the top salty and contain too many preservatives.

It is super easy to make your own healthier version of this Irish delight. The brisket brines for 2 days in the fridge using Lena's Perfect Pickles which brings out such a fabulous flavor—not only for pickles!

I served this with a traditional Colcannon which is a potato mash with added cabbage and green onion—so yummy.

I also made a quick and easy Irish Mustard Sauce to complement this meal. It really brings out the blarney in me!

A mug of Guinness ale pairs perfectly with this meal! Sláinte! (to your good health)

Brined Turkey

I love Thanksgiving!  I did not grow up in the USA but in Sweden and was not introduced to this fabulous meal until my late teens!  It is my absolute favorite meal of the year to prepare….

As most you know, this fantastic bird is easily dried out for various reasons.  I have learned that brining your turkey (whole or breast only) creates a spectacularly moist and delicious bird!

I used the MSC Turkey brine.  It is full of flavor…  Hand blended with sea salt, brown sugar, white peppercorns, orange peel, garlic flakes, black peppercorns, toasted minced onion, rosemary, pink peppercorns, thyme, basil, oregano, sage and bay leaves.

It is really simple to do and truly does make a huge difference!

Guacamole Spewing Pumpkin

Who doesn’t love Halloween! Fall is such a fabulous time of the year to have fun! Guacamole is a favorite to serve at parties and MSC’s Aunt Nee’s Guacamole Spice Mix contains all that you need to make yours spectacular! It is made with onion, chili powder, garlic, cilantro, sea salt and lime juice.

A great tip if you are not using your guacamole immediately is to place avocado pits into the mix and cover tightly with plastic wrap and store in fridge. This will help prevent browning you guacamole for a few extra hours!

We enjoyed mug of Pilsner with this meal!
