2 boneless, skinless chicken breasts. Cook with It's All Greek to Me dry rub, then dice
1/4 cup white balsamic vinegar (or your favorite vinegar)
2 cucumbers, peeled and diced
1/2 red onion, finely chopped
1/2 cup red or green bell pepper, finely diced
1/4 cup extra virgin olive oil
Combine all vegetables in a salad bowl and toss.
Combine oil and vinegar and 1 teaspoon MSC It's All Greek to Me and mix well
Add dressing to salad and toss to coat.
Add chicken and gently toss.
Fresh chopped oregano is AMAZING, add about a 1/4 cup, chopped.
Omit the chicken for a great vegan option or side salad.
Add feta cheese for a little tang.
