Serves 6-8
2 Lbs Ground Chicken
1 Onion, Diced
4 Carrots, Diced
4 Stalks of Celery, Diced
4 Cloves Garlic, Minced
2 Tbsp Olive Oil
2 Tbsp Johnny Pizza seasoning
2 15 Oz Cans Diced Tomatoes (or Fresh)
4 Tbsp Tomato Paste
2/4 Cup Red Wine
1 Bunch Parsley, Chopped
Salt to Taste
Let's begin by adding the diced onion, celery and carrots to a stock pot heated with olive oil. Add the fabulous Johnny Pizza seasoning and sauté until veggies are soft, about 8-10 minutes.
Add the ground chicken to the pot and break up the meat as it browns. Approximately 10 minutes.
Add the tomatoes (the picture shows my frozen tomatoes from the garden last year). This recipe calls for canned diced tomatoes.
Now add the red wine (one that you like to drink) and the tomato paste.
Let simmer for about 1/2 hour uncovered. Lastly, stir in parsley, though save some for garnish.
