Serves 6


1 Tbsp Olive Oil

3 Carrots, Diced Very Fine

1 Small Yellow Onion, Diced Very Fine

3 Stalks Celery, Diced Very Fine

8 Red Potatoes, Diced Medium

1 Lb Spicy Chicken Italian Sausage, Casing Removed

1 Tbsp Johnny Pizza Seasoning

1 14.5 Oz Can of Fire Roasted Tomatoes

1 14.5 Oz Can of Cannellini Beans

4 Cups Chicken Broth

2 Cups Water

6 Cups Baby Kale


In a large stock pot heat the oil. Add the carrots, celery, onion and cook until softened—about 8 minutes.  

Add the Johnny Pizza and sausage, and sauté until sausage is browned. 

Add the tomatoes, beans,  stock and water—simmer 20 minutes.

Add the kale to the hot soup a couple of handfuls at a time. It will wilt and shrink. Let the soup simmer another 5 minutes and enjoy!

I served crostini with this which is so simple to make. Rub a slice of bread with olive oil, bake at 400 for 3 minutes, add cheese of choice and continue to bake until cheese is melted.

If you wish you can also add a little shredded parmigiano cheese.
