I love adding bright, citrusy notes to my chicken (or fish), especially in this mad, mad June humid heat in Michigan.
I've been playing around with our delicious Lime Pepper blend, and here is my favorite marinade thus far, and giving credit where credit is due, I was inspired by a recipe I found through Allrecipes:
4 boneless, skinless chicken breasts
1 tablespoon Milford Spice Company Lime Pepper
1.5 tablespoons olive oil
1/2 teaspoon salt
1/2 cup of fresh squeezed lime juice
1 teaspoon sugar (or more to taste)
Mix dry and wet ingredients and place in a large freezer bag, add chicken breasts and return to refrigerator. Allow to sit for at least an hour.
Remove from bag and grill, cooking thoroughly, until chicken reaches a safe temperature.
I love to serve this with fresh sliced cucumbers, dressed with a little mayo and sour cream and dill.

variation: Try adding honey or agave instead of the sugar. Yum!
