Sour Salt is not really salt at all but citric acid - a natural ingredient derived from lemon, limes, and other citrus fruit. Often used in boischt and other menu items requiring a little sour. Some on a salt restricted diet use it to add a bite to their food.
In addition to borscht, we like to use it in some cheescakes. A light sprinkling acts as a great preservative on fresh cut fruit and will keep most from browning, try it on apples or pears. Sour Salt also acts as a convenient substitute for fresh lemon juice or vinegar in marinades and sauces.
