Thai food is known for its harmony of flavors and rich blend of herbs. And they can be extremely spicy if you don’t say to the cook ‘mai pet’ (not spicy). So if you want to acquire a taste for Thai food, it would be best to ease yourself into the exotic Thai flavors by starting with the less adventurous yet tasty Massaman Curry. 

Massaman curry (our version is called Tantalizing Thai) balances dominant flavors that are usually found in most Thai dishes in such a way that the spice does not override all other flavors. It is perfect for those have not yet developed a strong tolerance for the extremely spicy Thai dishes. It has a hint of (coconut) milk, a dash of sweetness and a discernible amount of herbs both in smell and in taste. What makes Massaman curry very appealing to almost everybody is its distinct use of different spices and herbs which are all roasted before being pound into a mixture of aromatic curry powder. 

To try cooking the dish at home, use Thai Spice to give you the unique blend of roasted and pound spices you will need to make a delicious batch. The Tantalizing Thai Spice is a mixture of garlic, lemon peel, tomato powder, onion, citric acid, paprika, coriander, basil, hot chili peppers, cilantro, and black and white pepper. Rubbing this concoction into pork or chicken lends it a much richer flavor. These spices had been carefully handpicked by Thai dish experts, roasted to perfection, and then pounded to achieve the perfect mix of aroma and flavors that every Massaman curry must have. 

Add shrimp paste, garlic, shallots, galangal, lemon grass and soaked red chilies for a more complex, Oriental flavor. Also, add some coconut milk and potatoes to give your curry the creamy taste that makes the whole dish both delicious and less spicy. Now that you have your Massaman curry sauce ready, you can then add carrots, pork or chicken. Serve hot with steamed rice.

This is the first time I have ever visited this site. I see a very interesting link about an INTRODUCTION to Thai food. Sounds fabulous! How disappointed am I to see it is just a discussion about flavors to add. If it were truly an INTRODUCTION, as you claim, there would be specific amounts. We are beginners. That is why we are interested in an INTRODUCTION to Thai food. Disappointed.
