2 boneless and skinless chicken breasts
2 teaspoons MSC It's All Greek to Me dry rub
1/2 red bell pepper, diced
1/2 medium red onion, diced
1 tablespoon olive oil
Squeeze of lemon juice
2 tablespoons feta cheese
1/4 cup sub dried tomatoes
10 greek olives, diced (we got the ones stuffed with feta)
1 teaspoon minced garlic
2 cucumbers, peeled and diced
1 tablespoon white balsamic vinegar
2 tablespoons fresh oregano, chopped
Season chicken breasts with It's All Greek to Me blend and grill until done, let rest for ten minutes and cut into bite size pieces
Combine all ingredients and toss
Add salt and pepper to taste
A perfect summer salad! Fresh, diced tomatoes can be used instead of roasted. Try with pasta too!
