Mexican Barbeque Slow Cooker Pulled Pork will give you a zip of flavor and a great and easy weeknight meal. Ingredients: 3-4 lb pork roast 2 tablespoons MSC Mexican Barbeque 1 medium yellow onion, coarsely chopped 1 tablespoon minced garlic 2 cups stock 1 small can tomato paste 1 can diced tomatoes Place chopped onions in bottom of slow cooker Mix garlic, Mexican Barbeque and tomato paste together Rub mixture over pork roast Place pork roast in slow cooker Add stock to slow cooker Cook on low for 6-8 hours, remove roast from pot. Remove as much fat from pot as possible, pull pork on cutting board with two forks, and put back in slow cooker. You may add additional Mexican Barbeque to taste or brown sugar to soften heat. Cook another 1/2 hour to an hour and serve with tortillas with guacamole, cheese, sour cream and salsa.
