Salmon Salad with Tequila Lime Dressing

Salmon is one of my family’s favorite things to eat. Today I decided to marinate using Taco Tuesday and tequila. It turned out to have a fantastic flavor and the tequila was a background note that was really pleasant.

Taco Tuesday is hand blended from chili powder, domestic paprika, granulated onion, cumin, granulated garlic, Mexican oregano, brown sugar, black pepper medium, and cayenne pepper.

Serve this salmon on a bed of veggies tossed with a Tequila Lime Dressing. The whole family loved it—great summer dish!

I enjoyed a chilled glass of White Shiraz with this salad.

Chicken Caprese Salad

Caprese Salad is one of my favorite summer dishes. Homegrown tomatoes and basil with fresh mozzarella, that is what I love!

My tomatoes are not quite ready yet so I made do with vine ripened tomatoes from the grocery store. Fresh mozzarella is a must, the drier aged version is not the same by a long shot. My basil however, is raring to go! I decided to make a salad today using these ingredients and paired with a chicken thigh layered with basil, tomato and mozzarella. Topped with a really great balsamic vinegar.

I used Buon Appetito to season my chicken. This wonderful salt-free blend is a balanced mix of Greek oregano, basil, marjoram, thyme, rosemary and sage. Perfect addition to tomatoes, tomato sauces, fish, poultry, meat and salad dressings.  Evening is Tuscany is a great alternative, this is a delicate blend of garlic, Kosher salt, Mediterranean oerago, basil, crushed red pepper, black pepper, rosemary, onion and parsley.  Added to olive oil, this blend also makes a great bread dip.

A glass of slightly chilled Chianti is a perfect pairing with this dish.

Honey Chipotle Shrimp Salad

One of our BEST SELLING spice blends of all time, Honey Chipotle (also known as Sweet Heat) is used to make this delicious light and refreshing shrimp salad.  Milford Spice company is donating $5,000 (1,000 packets of Sweet Heat) with all of the money going towards building Milford Skate Park.  Once the $5,000 is sold they will receive a grant doubling those funds to $10,000!  Such a great cause, we can't wait to see the kids enjoying that!

A delightful blend of Granulated honey, sea salt, onion, Spanish paprika, chipotle powder and Italian seasoning.

You can use this blend for just about anything.  Customers have described it as kitchen magic.  Great on popcorn, salmon, shrimp, chicken and veggies.  It is a little bit sweet with a hint of heat.  My kids add it to anything from mayo to ketchup!

This salad is great with a glass of White Shiraz.

Moroccan Couscous Salad with Spring Vegetables

Recipe courtesy of Marie Kelly, Milford Kitchen.

This fantastic salad with couscous and spring vegetables was created by Marie Kelly from Milford Kitchen. The recipe uses asparagus and spring onions which are excellent this time of year. The chickpeas (a.k.a. garbanzo beans or chi-chi beans) complement this healthy salad with their crunchy goodness and are also high in fiber and protein.

The dressing is seasoned with Moroccan Vegetable Rub from Milford Spice Company. This spice blend is blended from cumin, coriander, chili powder, smoked sweet paprika, cinnamon, allspice, ginger, cayenne and cloves. It will add a delicious pop of flavor to the salad.

Wordhouse Wow Vinaigrette

So tonight we made a lovely, light, vinaigrette using Wordhouse Wow.  This is such a flavorful blend made with Granulated garlic, lemon white pepper, parsley flakes, tarragon and chervil.

This is one of our favorite all-purpose herbal seasoning blend for vegetables, fish, chicken, eggs, dipping oils, and salads. Use as a base for marinades, get creative! As in all herbal blends it helps to crumble in your hand prior to use to release natural oils.

A nice cold glass of Pinot Grigio pair beautifully with this salad.

Panzanella Salad

Yesterday was a record breaking hot day. 102º in Denver, yikes! Hot or not, I still love to cook. I decided to make a Panzanella Salad. I used my first tomatoes from the garden, with homegrown oregano, basil and parsley. My neighbor Lori had some fantastic arugula that I also added. This salad is the quintessential summer meal!

Panzanella is a tomato and bread salad. A lot of recipes call for day-old bread but I like the flavor and texture of fresh better. Use a crusty bread, like Ciabatta, to make the hearty croutons.  Let the tomatoes and croutons sit at room temperature and the tomato juices and dressing soak into the croutons. You end up with a chewy/crunchy texture and flavor that is amazing!

I also added some chicken (you can skip if you want vegetarian) seasoned with An Evening in Tuscany. This is the first blend I tried from Milford Spice and now I am addicted to all of their fantastic products! This is hand blended with garlic, Kosher salt, Mediterranean oregano, basil, crushed red pepper, black pepper, rosemary, onion and parsley. To make a classic bread seasoning dip, mix 2 tablespoons An Evening in Tuscany with 1/2 cup of your favorite olive oil.

Do you know that you are never supposed to refrigerate tomatoes? Doing so changes the texture of the tomato and weakens the flavor. Leave them in a bowl on the counter. Not only will they taste better, they look so pretty and colorful.

A cool glass of Chianti paired perfectly with this meal.

Greek Salad with Grilled Veal

I have absolutely fallen in love with the Mediterranean Blend! I adore the fresh flavors of the region. This is the essence of the Mediterranean with herbs, spices and citrus. This blend is great for chicken, fish, pork and beef as a rub. Take your fresh veggies and sprinkle this blend for a full range of flavors. It is a great table condiment without the salt and sugar. Hand blended from thyme, oregano, sage, basil, rosemary, garlic, lemon peel and black pepper.

I made a vinaigrette and seasoned the veal with this rub. You can substitute veal with chicken and it would still be great. With almost any spice blend you can make a vinaigrette. Just use equal amounts of oil to vinegar. For this recipe I used 1/3 cup olive oil and a 1/3 cup lemon white balsamic vinegar with 1 tbsp Mediterranean Blend. Let it sit to soften the dried herbs and enjoy!

This is a really easy meal to make and is so light and flavorful. Perfect for a summer night's supper. The veal/chicken can be grilled outside or in a grill pan inside.

I also made a really quick garlic flatbread instead of croutons. Yummy!

A glass of chilled Chardonnay paired very nicely with this salad!

Italian Chopped Salad with Wild Harvest Oregano Viniagrette

What I suspect will be the very last of the Michigan roma tomatoes this year were calling my name today.  A fresh, bright, crisp fall day just begged for a hearty and (reasonably) healthy salad.  The Wild Harvest Oregano Viniagrette is such a versatily dressing - be sure to make enough to use it on other things - it's DELICIOUS as a marinade for chicken, too!
