Salmon with Ha Ha Habanero Peach Chutney
1 salmon fillet
1 teaspoon olive oil
1/2 teaspoon Milford Spice Company Ha Ha Habanero
2 tablespoons fresh, chopped cilantro (a touch more for the cous cous)
1 ripe avocado, diced
1 small red onion, diced
2 cans peaches, chopped
1 tablespoon honey
1 tablespoon vinegar (I used a honey balsamc vinegar)
dash of salt
Prepare salmon by adding a touch of olive oil and a light dusting of Ha Ha Hab seasoning. (LIGHT!)
Grill or bake salmon to desired temperature. (We used our new Pan Grill It to grill it inside).
While cooking the salmon, prepare the cous cous according to package directions.
Combine chopped (and lightly drained) peaches, cilantro, a half teaspoon of HA HA Habanero seasoning, honey, vinegar, red onion and avocado. Add a dash of salt to taste if desired. (Habanero Seasoning is salt free).
Combine cous cous with a tablespoon of chopped cilantro and mix well.
Serve salmon over a bed of cous cous topped with chutney.
