Perfect Chili


Perfect Chili

This recipe is super simple, but super effective. The base is what I’ve been using for years. Sometimes I switch up the meat and put in some sausages or chorizo to mix it up. But ever since I got Milford Spice Company’s Perfect Chili, I’m not going back to the mixture of spices I’d have to dig out of the spice drawer. It’s the perfect combo to make the absolute perfect chili.

Shredded Beef Enchiladas

An enchilada (en·chi·la·da) is a corn tortilla rolled around a filling and covered with a chili pepper sauce. Enchiladas can be filled with a variety of ingredients, including various meats, cheese, beans, potatoes, vegetables or a combination. Originating in Mexico, enchiladas are a popular dish throughout Mexico and the American Southwest. This recipe has a different twist. We use Beef Short Ribs that are cooked Sous Vide. The meat is very tender and flavorful.

Espresso Braised Brisket

To celebrate our family's many October birthdays, I decided to make a Espresso Braised Beef Brisket to feed a large group of family and friends. Mark’s Espresso Rub II is amazing on beef! I rubbed the Mark’s Espresso Rub II on the night before. It sat in the fridge and dry marinated overnight. Let me just say that there was not a morsel of brisket left!


I made sandwiches for my meal. But, you can prepare the same way and serve thinly sliced with mashed potatoes! So good!


We enjoyed a mug of ice cold Pumpkin Ale with this meal!

Crockpot "Carnitas" Style Chicken Taco's


Who doesn’t love carnitas!  Tender and crispy and full of flavor.  I love this recipe because it super easy and so delicious.  Using chicken makes it leaner than pork or beef but equally as flavorful.  I used frozen chicken breasts and frozen chicken thighs, seasoned with Taco Tuesday, cooked in the crockpot all day and finished in the oven. 


A family favorite to be sure!  Great weekday meal!


Serve it up with all the usual taco accompaniments.  I made a quick blender salsa using a can of chopped tomatoes, 1 bunch cilantro, 3 jalepenos and 1/2 onion.  Blend well, I used a big pinch of Lemon Sea Salt to finish.  Yum!


I also made a quick black bean side dish.  Recipe inside using Honey Chipotle to season beans.  So good!


A bottle of Tecate did this meal justice!

Crockpot Turkey Chili


Chili has to be one of the most perfect comfort foods!  It is so versatile and simple to make!  If freezes really well so I always make a very large pot of it and freeze in family size portions for a quick meal when I need it!


A glass of your favorite beer will pair great with this!

South of the Border Pulled Pork Sliders


It is Football Sunday and I have a bunch of people coming for dinner. I have a ton of errands to run and chores to do around the house. So, I decided to use the slow cooker to make it easy on myself. I have some pork sirloin roasts in the freezer and they truly make fabulous pulled pork! 

From a frozen state just defrost in the microwave for about 10 minutes on medium power. I have to be honest and say that I am not a fan of barbecue sauce! I think it makes everything (chicken meat or pork) taste the same. However, pulled pork is the exception! I enjoy a sauce that has a little bit of a kick and is not too sweet. 

This recipe is easy and quick to get going, but, it does take all day to cook. The upside is that your house smells fantastic and everyone’s mouth is watering by the time dinner is ready! Shredded Green Cabbage tops the slider. Coleslaw is also a delicious addition.

Today I chose baked french fries and a broccoli salad as sides. 

An IPA (India Pale Ale) is the perfect accompaniment! Touchdown!

Crock Pot Curry Chicken

 Ten minutes of morning prep will yield a delicious dinner with our Maharajah Curry Chicken.  The Maharajah Curry has just a touch of heat, and if used modestly will most likely suit even the wimpy palate.

Our Maharajah Curry includes saffron, which will brighten you dish with a lovely yellowish hue.

We made this with cannellini beans, collard greens, garlic, and onion, but you could easily add other veggies you prefer.

Pair this with rice or cous cous and you'll be ready to ring the dinner bell!

Fennel Pollen Dusted Pork Roast

Have you tried fennel pollen?  Unreal.  It ranks (to me), right up there with truffle salt as a seasoning I just don't want to go without.  Now I am not a HUGE black licorice fan, and I know that that flavor is probably what you have in mind.  Oh no, it is so much more.  It has aptly been described as "culinary fairy dust" for its magical qualities.  Try it on just about everything, but just try it. 

Today we tried it in a slow cooker on a pork roast.  And how'd it taste?  Unreal.

Johnny Pizza Soup

On a cold and windy day it is always nice to come home to the smell of a nice, hot soup. Spend a few minutes in the morning to prep and this delicious treat will be ready to go!
 
We've been working hard on keeping an eye on our carbs—not too much bread and certainly not pizza—so a soup with the flavor we've been missing really hit the spot!

Slow Cooker Chicken Tikka Masala

M. came home raving about the Chicken Tikka Masala he enjoyed at a friend's house, so I set out last Sunday to come up with a good slow cooker version, with an eye on the health factor.  (We are being careful with our simple carb intake, trying to eat local whenever possible, and also stick with natural ingredients.)
 
What to do for a good rice substitute?  We hodge-podged one together from some ideas we found online, and we LOVE cauliflower rice.  Cauliflower rice? Well, not exactly, but cut in to small bits and steamed it surely is a delicious base over which to serve the Chicken Tikka Masala.

It's All Greek to Me Slow Cooker Chicken

It's getting chilly here in Michigan and this time of year always makes me think about warm, yummy meals made in the Crock Pot!
