An Evening in Tuscany Sausage & Tortellini Soup

An Evening in Tuscany Sausage & Tortellini Soup

Ok so I actually grabbed ravioli instead of tortellini for this recipe, but you know what? It doesn’t matter. It still tastes great, thanks to Milford Spice Company’s An Evening in Tuscany (clearly becoming one of my all-time favorite spices ever!). I do recommend the tortellini, but if they’re all out at the store, go ahead and grab that ravioli - no one’s judging. You’re going to love this no matter what!

Beef and Vegetable Soup

I loved the Perfect Chicken Soup so much I decided to make a Beef Vegetable Soup. Once again I used the Instant Pot, but you can of course make this on the stovetop or the slow cooker as well.

For my Beef Vegetable Soup I used the Awesome Onion Soup blend. This is hand blended with minced onion, parsley flakes, turmeric, onion powder, celery salt, sugar and black pepper. It is fantastic as a dip, great on roasts, potatoes and as a soup starter. Today it is a soup enhancer, so good and very good for you!

I used the traditional Beef Vegetable Soup veggies for this—English peas, green beans, fingerling potatoes and carrots. Add the quick cooking veggies almost at the end to keep them from getting mushy.

I also whipped up a caramelized onion grilled cheese sandwich to go with the soup. Yum!

A glass of Merlot went very well with this meal.

Chicken Soup with Bisquick Dumplings

This is another quick and easy recipe using ingredients most of us have in the pantry and fridge.  This soup is super simple, and another recipe that the kiddos can help cook.

You can pretty much use whatever veggies you have on hand.  For this I used carrots, potatoes, onion and celery.  You could also use sweet potatoes, broccoli, zucchini, squash, rutabaga, to name a few.

Today I used Adobo Lime to season the soup.  This fabulous seasoning is hand blended from fennel seed, cumin, coriander, black pepper, garlic, Mexican oregano, lime zest, kosher salt, thyme and rosemary.  It is truly wonderful on just about everything from fish, shrimp, chicken, pork, beef and vegetables.  One of Milford Spice Company's  best sellers at Farmer’s Markets and a customer favorite!  If you do not have Adobo Lime, chicken soup is very much a blank canvas, try with your favorite Milford Spice Blend.  No matter what you use. it will de delicious!

You can use a boxed stock/broth or you can simmer you chicken in water to cook and use that as y our stock.

Bisquick is used to create these fantastic dumplings.  This soup is perfect for a chilly night….

Columbian Chicken Soup

I adore creating new soups. Especially this time of year when it's chilly outside and we want to be healthier!

Fish Delish is so versatile, hand blended from thyme, Greek oregano, basil, rosemary, sage, orange zest, lemon zest and fennel. It is truly fantastic on fish, chicken and veggies.

The Columbian Chicken Soup is a hearty yet healthy chicken and potato soup with corn and a wonderful salsa on top. I also served this with a savory whipped cream, optional, but added a richness.

I made may own chicken stock, but to make this a quick and easy soup, you can use store-bought stock and use shredded chicken.

A nice ice-cold Corona goes beautifully with this soup!

Perfect Chicken Soup

This cold/flu season has been brutal! Lots of runny noses and coughing at my house, so I decided to make a healing, feel-better soup. My Instant Pot is one of my new favorite kitchen tools. Not only does is cook quick, but it infuses so much flavor. The cooked chicken is tender and juicy, practically falling off the bones.

You can also make this soup in a crock pot or on the stove top. In a crock pot it takes 8-10 hours on low, stove top simmer for 1 1/2 hours. Use the same directions.

For my soup today I am using Perfect Chicken Soup Mix (Perfect Poultry). It is hand blended with just the right balance of freshly ground marjoram, thyme, oregano, sage and rosemary. One of my favorite salt-free blends.

You can literally use any combination of veggies that you wish. I used a traditional blend of carrots, celery, onion and peas. I made the noodles separately and placed in my bowl before the soup itself. I find that if you add the noodles as part of the soup, the soup gets gummy and the noodles mushy.

I think you will love this soup!

Instant Pot Green Chili Chicken Soup

Instant Pot Green Chili Chicken Soup

After the holidays we all like to eat a little lighter. I had some green chilies in the freezer and decided to try a soup (if you do not have frozen green chilies, canned from the grocery store is fabulous as well). Cooking in the Instant Pot is so amazingly easy! This soup is light, flavorful and great on a cold day. Freezes great!

I decided to use Adobo Lime. I love this in my Green Chili Stew, perfect complement to the green chilies. Adobo Lime is hand blended with fennel seed, cumin, coriander, black pepper, garlic, Mexican oregano, lime zest, kosher salt, thyme and rosemary. Fantastic on beef, chicken, seafood and veggies.

An ice cold Corona Light with a lime is perfect with this dish!

Barb's Beef Barley Vegetable Soup

We had such an exciting group of Soups that were entered into our Souptober Contest!

Congratulations Barb on winning 1st place, a Vitamix and $100 gift card to Milford Spice Company!  It seems that she is a Chef at heart and we hope to be able to share more of her beautiful recipes.  Thank you Barb!

Barb chose to use Ravensview Rosemary Garlic.  Ravensview Rosemary Garlic is a black pepper blend made with sea salt, black pepper, garlic, chive and rosemary. It is a real winner for lamb and other red meats. Great on beef ribs, roasts and soups. We use it on roasted potatoes and other veggies too.  Think Holiday Standing Rib Roast!

Simply Impressive Minefagiole Soup

Recipe courtesy of Judy Toth, Simply Impressive Cooking School.

Two of my favorite soups are minestrone and pasta fagiole and sometimes I like to make one soup that encompasses the flavor of both soups. That is how minefagiole (pronounced mini fa golie) was born.

I used fresh carrots, but you can use frozen crinkle carrots if desired. You can also swap out the crushed tomatoes for bottled spaghetti sauce, but if you do that, you will want to adjust your seasoning a bit. This is my choice of vegetables, but if you prefer spinach, that’s a great substitution. Zucchini can be eliminated if you are not a fan.

As you can see, this soup is flexible. Use what you like or what you have available at home. This recipe is really good as written, however you can also use it as a canvas to make it exactly as you like.

Beef Barley Veggie Soup

This soup is wonderful on a cold winters night (or truly, anytime of the year).  It is a light, filling and so flavorful.  Simmering the beef long and slow makes the beef bites incredibly tender!  Mushrooms and barley go so well with the beef.  You can make this on the stovetop or in a slow cooker on low for 6 hours.

This soup is light enough to serve with a grilled cheese sandwich if you so desire.

To make this recipe Paleo friendly, substitute or eliminate the barley.  It will still be delicious!

Ravensview Rosemary Garlic is hand blended from black pepper, rosemary, granulated garlic, granulated onion and sea salt.  This blend is fantastic on potatoes, steaks, lamp chops,  poultry and veggies.  Definitely a must have pantry staple…

We enjoyed cold beer with this meal.

Citrus Chicken Soup

A wonderful soup tastes great any time of the year. I love this chicken soup because I know everything that is in it! So healthy and fabulous.

Today I used Citrus Sea Salt which is such an amazingly versatile seasoning. It is hand blended from sea salt, orange zest, lemon zest, coarse black pepper, lime zest, smoked Pacific sea salt and ginger root. It adds citrus kick to anything you make. Mmmmmm!

I served this soup with a simple grilled cheese sandwich. We enjoyed a glass of Merlot with this soup.

Johnny Pizza Kale & Sausage Soup

I adore the cooler weather and making soups from scratch! It is so healthy and fresh! I have been playing around with different spices and found that Johnny Pizza is amazing not only in soup, but for all my Italian dishes. The crushed red pepper adds just a little heat and the mix of Mediterranean oregano, basil, garlic, onion, thyme, fennel seed, red bell pepper, parsley and marjoram is an wonderful combination!

I served this soup with crostini.

A glass of Chianti pairs so well with this meal.

Buon appetito!
