Tequila Lime Chicken Tacos:
4 chicken breasts, cubed into bite sized pieces
1/2 cup of lime juice
1/4 cup of tequila
1 cup of fresh cilantro
2 teaspoons Milford Spice Company Jalapeno Powder
1/4 cup olive oil
8-10 tortillas (I like to use wheat)
Finely grated cheese of your choice
1/2 cup sour cream
1/2 of a yellow onion, finely chopped
Over medium heat, lightly coat saute pan with olive oil and add chicken.
Combine 1/4 cup lime juice, 1 tablepoon tequila, and 1 teaspoon jalapeno Powder and add to pan, mix well
After about five-seven minutes, add onion (I like the onion to still be a little crunch when serving, you can add them towards the beginning if you prefer a grilled onion)
Cook through, remove from heat and add 1/2 cup of cilantro, mix well.
Meanwhile:
Combine in a food processor or blender the following:
1/2 cup sour cream
1/2 cup mayo
1/2 cup cilantro
1 teaspoon MSC Jalapeno Powder
Remaining Tequila
Remaining lime juice
Mix well
Place chicken in center of taco, sprinkle with cheese. Serve with Tequila Lime Cream Sauce on the side. Garnish with cilantro sprig.
We like to serve this with pinto beans if you remember to start them earlier in the day!
