1 Tbsp olive oil

1 lb spicy Italian sausage 

1 red onion, diced

4 large carrots, chopped

2 Tbsp minced garlic

6 cups chicken broth 

30 oz canned white beans, rinsed and drained

3 cups spinach

2 bay leaves

1 tsp salt

1 tsp Milford Spice Company’s An Evening in Tuscany

1 cup heavy whipping cream


Heat oil in a large pot. Cook sausage thoroughly. 

Add onions, garlic, and carrots. Cook 3-4 minutes.

Add broth, beans, salt, Milford Spice Company’s An Evening in Tuscany, and bay leaves. 

Bring to a boil, reduce heat, simmer for 25 minutes until carrots are tender. 

Turn off heat and stir in spinach and heavy whipping cream. 

Serve while hot. Enjoy!
