Grilled Pork Tenderloin Medallions

My husband loves to grill, so I ordered a bunch of new spices. My package came today and I am trying out the Smoked Tea Rub for the first time. It smells divine! I had some pork tenderloin I was planning to grill so I decided to try my new rub with it. The Smoked Tea Rub added amazing flavors, truly delicious!

I served this with mashed potatoes topped with very thinly sliced green onions.

I enjoyed a glass of Merlot with this meal.

Moroccan Lamb & Lentils

I am having so much fun learning to cook with new and unusual spices! Zahtar is one of my new favorites. It originates in Middle Eastern cuisine and prior to trying this from Milford Spice Company had never heard of it. I really like it on Naan or as a finishing touch on soups and Middle Eastern dishes like this one. I also used the Moroccan Vegetable Rub which is fabulous on much more than vegetables!

This May in Colorado has beed really wet and cold! This is a light dish but hearty enough for for a cold day. It is also a super quick and easy meal to make! My hubby and girls loved this dish, I hope your family will too!

I served Naan with this, simply prepared with garlic butter and Zahtar. Really yummy!

Baked Honey Chipotle Salmon

Honey Chipotle is the perfect complement to salmon. It does not get any easier than this! The sweet heat of the caramelized crust is simply the best.

My family loves salmon and even those who are not salmon fans will love this.

I served this with an Asian slaw.

We enjoyed a glass of Pinot Grigio with this meal.

20 Minute Skillet–Tuscan Pasta Pescatore

It is wet and cold outside and I was in the mood to have something special. This Tuscan Pasta Pescatore is super simple and quick to make. An Evening in Tuscany is my absolute favorite Milford Spice Company blend—absolutely gorgeous!

I used a frozen seafood mix containing shrimp, scallops and calamari. You can also add clams or mussels towards the end of cooking and it is done when the shells have opened.

A simple Gremolata tops this dish and really brings all the fresh flavors together.

Some crusty bread is all you need to serve this with.

We enjoyed a glass of Chianti with this meal.

Hope you enjoy!!

20 Minute Skillet–Pork & Broccoli Pad Thai

Spring in the Rockies is typically wet and cool. That is certainly the case tonight and we are in the mood for some comfort food. There is something about a slightly spicy noodle dish that totally fits that bill. The Tantalizing Thai is a wonderful blend of spices that makes this dish sing!

Traditionally Pad Thai is served with the rice noodles and it's also good with rice. You can add a little bit of peanut butter to make it sweeter if you wish.

We enjoyed a glass of Iced Tea with this meal.

Johnny Pizza Chicken Spaghetti Sauce

I am trying to make sure my family eats healthier. Today I made a spaghetti sauce using ground chicken and Johnny Pizza seasoning. It is a fabulously flavorful spring version of the heavier meat spaghetti sauce. I ran out of my favorite Italian seasoning, Evening in Tuscany, so I used Johnny Pizza. Wow, what a great choice! Really made the flavors pop!

At the end of last summer I had a ton of cherry tomatoes that I didn't know what to do with so I decided to just rinse them and freeze them raw. Much to my surprise it worked wonderfully! Adding these is like tasting summer! I will show the recipe to use canned tomatoes, but if you have the chance, freeze fresh ones when you can. Yummy!

Hope you enjoy as much as we did.

We enjoyed a glass of Chianti with this meal.
