1 zucchini small, sliced lengthwise into 4 pieces
1 red pepper seeded, cut in quarters
1 eggplant eggplant thinly sliced
4 slices red onion
2 tbsp extra virgin olive oil
2 Tbsp Milford Spice Company’s Wordhouse WOW Herbs for Grilling
4 Tbsp cream cheese
Deli sliced turkey breast (as much or as little as you like)
4 bagels (I used homemade Everything bagels)
In a medium bowl, place zucchini, red pepper, eggplant, red onion, Milford Spice Company’s Wordhouse WOW Herbs for Grilling, and olive oil; toss till covered.
Preheat barbecue or indoor grill to high. Place vegetables on grill and cook until they soften (about 5-7 minutes on each side). Turn and grill until cooked through. Remove from heat, place back in the bowl.
Toast each bagel unless you’re using fresh warm ones. Slice bagels in half and spread cream cheese on each, then top with turkey and vegetables. Close Sandwich and enjoy!
