Butternut Squash Soup

2.5 lbs butternut squash diced
1 1/4 lbs Spanish onion diced
1 lb celery diced
1 lb carrot diced
1.5 qt veg stock
6.25 oz coconut milk
6 Tablespoons of Big Easy Bourbon Molasses

Cook down butternut squash until soft, sweat mirepoix (veggies) add veg stock and chopped butternut squash, coconut milk and Big Easy Bourbon Molasses. Puree, adjust salt and pepper garnish with diced butternut squash

Optional: Foam coconut milk and pumpkin pie spice and top the soup
