1 1/2 pounds large shrimp, cleaned

2 tablespoons olive oil

1 lg Green Bell Pepper, sliced

1 lg Red Bell Pepper, sliced

1 Onion, sliced

1 Fresh Pineapple

2 Tbsp Fabulous Fajitas

1/2 Bunch Cilantro, chopped

9-12 Corn or Flour Taco Size Tortillas

Avocado Sauce

2 Avocados, pitted

1/2 Bunch Cilantro

2-3 Jalapeños, seeded & chopped

2 Limes, juiced

1/4 Sour Cream




Lets begin by making the avocado sauce.  Place all ingredients into a blender and blend till smooth.  Place in fridge till ready to use.

To dice the pineapple, start by cutting off the top and bottom.  Slice off the edges, leaving the CORE, toss core. Dice into 1/2” chunks.

Heat oil in a large skillet.  Then add onions and green and red bell peppers.  Sauté until veggies start to soften.  

Add pinapple and sauté for another 5 minutes.  

Add Fabulous Fajitas and shrimp.  Sauté until the shrimp are no longer opaque, you want to slightly undercook, they will be perfect as you plate.

Add chopped cilantro, toss.

To serve place shrimp and veggies in warmed tortilla.  Top with the avocado sauce and enjoy
