ยท        1 diced Spanish onion
2 jalapenos, cleaned and diced
2 tbsp. extra virgin olive oil
1 15oz can black beans, drained and rinsed
1 15oz can pinto beans, drained and rinsed
1 15oz can of corn, drained
1 cup grape tomatoes
2 tbsp. Milford Spice Taco Tuesday Blend
Cotija Cheese
Salt
Pepper

 

Directions:

Sauté onions and jalapenos in sauce pan over medium-high heat until soft. Reduce heat to medium and add beans, corn, and grape tomatoes. Cook until hot and tomatoes start to blister. Mix in Taco Tuesday spice blend and salt (to taste). Finish by sprinkling with cotija cheese. Serve with tortilla chips, crispy taco shells, or flour tortillas. Makes 6-8 servings.
