Grilling isn't just for Meat! There are so many different things you can spice up and slap on the grill! With our Up North Grilling Spice you can kick up the flavor on that Impossible Burger. Be sure not to forget the fries with our Black Truffle salt, its a game changer on potatoes, and pretty much anything.
INGREDIENTS:
4 Impossible Burgers
2 Tbsp Milford Spice Up North Grilling Spice
2 pretzel buns
2 Tbsp garlic aioli (vegan or regular)
1 cup arugula
Red onion, sliced
1 cup tomato jam*
4 slices cheddar cheese (vegan or regular)
*For the Tomato Jam:
2 pounds plum or Roma tomatoes, cored and cut into 1-inch pieces
1/2 cup packed dark brown sugar
2 Tbsp apple cider vinegar
1 Tbsp grated peeled fresh ginger (from 1-inch knob)
1 tsp kosher salt
1/2 tsp ground cumin
1/4 tsp smoked paprika
1/4 tsp red pepper flakes
For the Tomato Jam:
Combine all the ingredients in a Dutch oven. Place the tomatoes, sugar, vinegar, ginger, salt, cumin, paprika, and red pepper flakes in a 3- to 4-quart Dutch oven. Bring to a boil over medium-high heat, stirring occasionally with a rubber spatula or wooden spoon.
Simmer the jam until thickened, about 2 hours. Reduce the heat to medium and gently boil, stirring occasionally, until thick and jammy, about 2 hours. You'll know it's done when you scrape a spoon across the bottom of the pot and no liquid fills in the path.
Divide the jam between 2 (8-ounce) canning jars. Cool, then seal and refrigerate for up to 2 weeks.
For the burger:
Sprinkle 1/2 Tbsp on each side of the Impossible Burgers with Up
North Grilling Spice and pat it in to make it stick.
On a hot skillet, slightly oiled, grill the burgers for 2-4
minutes per side.
In another pan, melt 1 Tbsp butter, and place each side of the pretzel buns, open side down, and let toast for 2 minutes.
In a bowl, add avocado, 1/4 tsp salt, 1 tsp lemon juice and mash with a fork, leaving it a little chunky. Set aside.
On both bottom pieces of the toast, spread the garlic aioli. Top with 1/2 cup arugula. Place one of the Impossible burgers, then the cheese, and top with the other burger, then another piece of cheese. Add the avocado mash, then top with a few red onion rings.
On the top pieces of the pretzels buns, spread 1/2 cup of the tomato jam on each. Place on top of the burgers to close it up.
Serve with fries or
your choice of something delicious!
